COMMERCIAL DESCRIPTION We call this Viking, as Liverpool and the surrounding areas have a strong Nordic background. We were originally going to call it ’‘Toki’’ after the Viking who founded Toxteth (Toki Straith) – but we felt bar staff across Liverpool would curse us for having to pronounce it for everyone, so we went with a broader name! We use two bittering hops for Viking added at the beginning of the boil. Target hops and Columbus hops. Columbus is a very high alpha and gives a great pungency to the reliable bitterness of Target. During the last half hour of the boil we add four different hop types to build flavour, including Willamette an awesome hop that’s just plain lovely. It’’s a great smooth bitter, not harsh enough for a Best Bitter and a bit more alcohol than a session – it goes down really smooth.
