COMMERCIAL DESCRIPTION
Named after the 6th sense, Umami is a hybrid ale with 2 different yeast strains and 40 % wheat. Barrel aging gives it a sour counterpoint to the malt sweetness.

Orangish pour, off white head. Tart flavor, some citrus notes, light toffee, a hint of wheat, malty flavors mixed with a fruity and tartness. Neat beer.

It is a sour wheatwine. I think most people arenít usually fans of the style and im so so on it. This one is lighter on the palate malt-wise so it takes in a good amount of barrel and sourness.

Sample at brewery 2/27/10 Pours a hazy golden. Aroma of oak. Tast of oak, alcohol, and wheat. This full bodied brew was damn good. Nice brew.

A hazy orange colored pour with a small off-white head. Nose is incredibly fruit forward. Tangerine, peach, grapefruit, and nectarine notes up front. Tons of oak and vanilla, some mild tartness, and a bit of malt sweetness. Sweet fruit flavors, too. Tangerine, nectarine, and peach are particularly pronounced. Light caramel sweetness, tart lemon, oak, and some vanilla. Very mild mustiness on the finish.

On tap at the brewpub. Pours a cloudy, orange-bronze colored body with a thin, creamy, white head that dissipates slowly and leaves a nice lacing throughout. Aroma is medium sweet wheats with a slight tartness, a few dark fruits and plums, a light caramel, and some apple esters. A bit grainy as well with a touch of herbal spice. Flavor is wheats and caramel up front with a light sourness, some plum dark fruits, apricot, apple, and cereal grains. Nice herbal and yeasty spice balances out the malts throughout and helps dry this with a medium-light bitterness. Tad bit sour and a light crisp wheat in the end with a good amount of fruit and a light oak coming out in a lengthy aftertaste. Medium, somewhat creamy body with a medium-light carbonation and just a hint of alcohol warmth in the chest. Overall, a solid wheat wine. Not too sweet and well balanced with a light spicing. A good amount of fruits and the touch of sourness plays well off the wheat and caramels. Hides the alcohol very well. Nice beer.

On tap at The Livery. Pours a very hazy golden color with a thin white head and no lacing. The nose brings forward a bit of grain as well as some more peanut character. Very odd. Beyond that, a bit of sweet honey and some alcohol. The flavor brings more of the honey, and itís far too sweet. Mild booze in the background. Body is too big. Low carbonation. sampled at GTMW 2010... pours a dark reddish caramel brown with a thin soapy head...sour nose with cinammon, plums, spice, and a vinegary notes... sharp acidic with a nice sour plum feel to it. soft bourbon and oak with a little heat as well.

Aroma is so strange. Holy crap! Sour. Tons of higher alcohols, umami to say the least. I canít even describe this. Itís crazy unique and good! Taste is totally higher alcohols, barleywine-esque, sourness, funk, and loads of lactic acid. Finish is sour, tons of caramel, and umami. This is a well made higher alcohol sour that definitely is a sharp departure from the rest of the higher alcohol beers I have had.

old notes from winter beer fest, 2010 in grand rapids mich. brownish body with small white head. aroma of sourness, dark fruit, and some barley..flavor is big sourness, with huge acidic fruit, wood, and earthy elements.

I donít know who added this into the system or how I am the first one rating it...but wow. Pours brown with almost no head. Light aroma, slight sour and fruity. Hides the ABV well and doesnít seem like must of a Wheat Wine. The slight sour flavor is interesting though and I thought this was an amazing beer.
