Our organic red ale is brewed in traditional West Flanders style. A combination of light, crystal, and dark barley malt, wheat, and oats are brewed with local whole-cone hops and a variety of select yeast and lactic bacteria. We age our red ale in oak barrels for a period of time to develop complex richness, soft tannins, and fruity tart character. The aged beer is then blended with young beer to create the desired balance of malt sweetness with a dry finish.

Draught @ Bailey’s Taproom, Portland, OR. Pours dark reddish with a smooth head. Aroma of tart berries, vinous notes, farmyard and yeast. Taste is funky, slightly tart and woody with some ripe apples, wood and oak. Finish is yeasty, woody and ripe with loads of tartish apples. Not very aggressive, feels almost like a hard cider.

750ml bottle acquired from Binnys South Loop (Chicago, IL). Finally grabbed this sucker. Been looking to do it for awhile. Pours a fairly hazy copper ruby hue, darker middle, hazy body and some nice reddish fiery glow onto the edges and bottom. A loose bubbly off white head atop dies down and laces small. Quickly dissipating layer with loose ringer. Aromas show firmer oak and vinous fruit. Touches of grape, cherries and earth meet gentle leather, wood and oak. Jabs of balsamic, raspberry remnants and tart cherries meet some decent lactic tartness as it settles.A bit of earthiness, carmelized elements sneak in behind, bready and subtle biscuity elements. Subtle red wine, decent lactic kick. Initial is lighter end of the fold overall, a touch of body with some punchy lactic bite up front. Tart cherries, subtle red wine, and some decent oaky character works it’s way in. Vanillin, wet wood and gentle vinous character meet earth, subtle toast and carmelized appeal. Subtle yogurt, more earth and some tart fruit. Dried dark fruit and some gentle body, firmer oak into the backend. A bit of twangy and metallic punchy lactic sourness, some subtle citric and tart cherry appeal. Metallic, a bit dry and toasty as we press into the backend. This works pretty well. True to it’s base but enough lactic and oaky appeal to make it interesting. This works well overall, a firmer oaky appeal that shows that toasty/biscuity life into the backen and finish. Never heavy, this one still goes down pretty easy. Dry, tannic, toasty, lactic with dark fruit, vinous characters, some earthy and leathery qualities. Overall, a bit of a murky pour but some healthy striking glow at times. A light enough body and wild enough appeal to make it work, this flows pretty nicely. Red grapes, plum and some raisin and dark fruit vinous appeal really softens the blow. Decent sourness, firmer oak, toasty appeal. Bitter cherry pit, metallic mineral appeal. I dig this. While it’s sure not to "Wow" or overwhelm, it’s pretty great flow, good flavors and integration make it a pretty proven offering. Tasty.
