Our organic farmhouse ale is brewed in small batches on a traditional farm brewery as it has historically been made for hundreds of years. This unfiltered bottle of seizoen, with its beeswax seal, is naturally refermented and carbonated with select yeast strains producing fruity and spicy flavors that are balanced by hops and a soft malt character. Special Brettanomyces yeast provides added dryness and crisp complexity. For the most satisfying results, store upright in a cold, dark place and enjoy in a proper glass.

"Kind of on the bubble between farmhouse saison and wild ale. Pretty dang bretty, peach and apricot come into play in the aroma and flavor, as does a hint of spice and a good dose of tartness. A bit of grassy hops in the finish. A delicious refreshing beer from a brewer I’d never heard of before purchasing this 750

From old notes, tasted with Curtis and some friends in Nashville, probably some time near the summer of 2012, from a waxed 750mL gusher of a bottle. Pours clear light orange with a massive, rocky white head that leaves thick lace. The nose is spicy yeast, nice brett funk, some caramelized orange peel malt. The flavor shows the caramelized orange peel up front, moving to all of the funky brett and lightly spicy and bitter character. The body is medium with average carbonation and a long spicy and funky brett finish.

Bottle poured into tulip. Pours orangy with massive white head. Aromas of wheat, peach, champagne yeast, funk. Tastes are similar plus banana and an acidic Saison yeast and brett funk. What a complex, stellar, and stunning, Saison. Truly amazing.

This one poured a hazy yellow color with a white head. Aroma was big fruit, Brett, wet rocks, grainy, and herbal. Flavor was similar, but incredibly balanced between light Brett, citrus fruit grassy hops, light lemony character and cracked wheat. Pretty much exactly what I want in a saison, and way better than any saison I’ve had from Hillfarmstead.

750 ml Bottle. Golden peach colored in appearance with plenty of off-white head. Aroma is dominated by floral citrus, Brett, green apple and white grape. The flavor starts out with a moderate dose of Brett funk, fruity esters and lemon rind with a bit of apple and pear in the background. Mouthfeel is medium-bodied with heavy carbonation and an extremely dry, tart finish. The Brett blends quite well with all of the complex fruit flavors.
