COMMERCIAL DESCRIPTION
Our organic farmhouse ale is brewed in small batches on a traditional farm brewery as it has historically been made for hundreds of years. This unfiltered bottle of seizoen, with its beeswax seal, is naturally refermented and carbonated with select yeast strains producing fruity and spicy flavors that are balanced by hops and a soft malt character. Special Brettanomyces yeast provides added dryness and crisp complexity. For the most satisfying results, store upright in a cold, dark place and enjoy in a proper glass.

750mL, Bottle No 5B 7665, Best by 12/2016 from Olive Tree Market in OB, $11.19.Effervescent medium gold with a big three finger pillowy off-white head with great retention. Definitely has some fruity pineapple brett that is a little sour, but not crazy so thus far in the nose--the large head could be dampening the aroma, though. There is also some dusty white pepper and the earthy manure notes that seem pretty signature to these guys (at least the other two beers I’ve had) are present, but more hanging out in the background with some mineral notes. Flavor didn’t seem quite as bretty or fruity, and the earthy rustic and pepper notes get much stronger. Flavor also is showing some alcohol as well, though no stronger than the stated 8% ABV. Bone dry finish, bitterness peaked at a Medium body with high carbonation. Pretty tasty, need to pick up a couple more bottles of these

750 ml bottle into a HF wine glass Bottle No. 14, 581. Best Before: 06/2017. HUGE gush over upon opening, took a few minutes to calm it down and collect all the foam. A - Obviously the beer got mixed up due to the gush. Pours a hazy peach color, huge billowing mound of dirty white foam with some brown tints. Pretty aggressive looking but awfully lively. S - One of the most enjoyable saison aromas. Earthy brett funk, sweet pears and apples, tart lemon juice, yeast and some grass. Light on the spices which I really prefer. Its just so funky and fruity. This is excellent stuff. T - Again with the brett funk and the sweet pear and apple juices. Pretty yeasty. A touch of grass and an absence of the usual spices and peppercorns typical to the style. Tart and delicious. The beer is medium bodied and creamy but with a dry and bretty finish. Rather complex and stupidly delicious. The 8% abv is not even noticeable. O - The best American made saison I have ever had, I’d even go so far as to say its better than the Hill Farmstead offerings. Its simple and clean with plenty of brett and fruit juice overtones. This has sat for weeks and even still it exploded upon opening. Getting over that I adore this beer.

Bright almost lemon aroma. Golden body and white bubbly head. Tart taste but incredibly smooth. I accidentally broke the mouth trying to open it and had to filter it through a coffee filter. Gotta admit, pretty bummed. I’m going to buy this beer again and re-rate it.

Brett is strong in the nose complementing the citrus and apricot fruitiness and honey sweetness. Hazy opaque deep golden coloured body is topped by a generous, fine-bubbled, long-lasting, white head that coats the sides of the glass. Earhtiness joins with spiciness alongside the sweet and fruity flavours in a pleasantly complex mouthful. Medium body has wonderful, lightly prickly effervescence. Tulip glass. Cellar temperature. Bottle purchased at Brewery Creek in May 2013.

Large Bottle: Golden yellows with a haze. Minimal head. Moderate lacing. Very complex, root cellar aroma. Full bodied with a very subtle sweetness briefly moving through a sour transition to bitter in the finish. Dry. Crisp. Very good with salumi & salty cheeses. Love it. ~m --RaucusBacchus

Pour is pure hazed pale gold with tons of tight fluffy white head. Nose is very nice, faint farmhouse yeast up front with a great Brett presence of citrus and apricot, faint spice behind. Taste is more integrated but a little less bright, just slightly. Light farmhouse, nice citrus and peach, faint banana. Strong carbonation and dry finish on the light airy body.

(Rating #4730)

750 ml bottle with gold beeswax seal purchased 14 months ago at Holiday Wine Cellar ($11.99). Difficult to open with the wax seal, but when it does open it’s an absolute gusher and I have to struggle to not lose too much of the beer. Pours a hazy golden-amber color and the excessive carbonation yields a big frothy white head with good retention and good lacing. Aroma of musty basement, wet grains, lemon, stone fruit, and a bit of spicy and floral hops. Flavor has a strong initial brettanomyces tang followed by notes of sour lemon, musty yeast, apricot / peach, bready malts, and some spice. Dry finish with prickly carbonation. A little heavy on the palate for a saison. The strong brett element makes this a delicious and decidedly different kind of saison. (183, 788)

Appearance: hazy bright orangey gold (almost OJ-like), with a long-lasting fluffy white head and generous lacing. Aroma: scads of citrus, some tropical fruit, dough, honey smacks, wild brown rice, a bit of toast, and a firm blast of sharp, crackery brett funk. Taste: tart citrus right off the bat, with grapefruit, pear, and maybe passion fruit; under that the saison notes come out, with white pepper, brown bread, a hint of candi sugar; everywhere the brett has a hand, though. Finish: very dry, a little more bitter than the standard saison, with notes of that strong brett funk (crackery, citrus, doughy, with a hint of plastic) lasting awhile. Notes: Not the hugest fan of brett-fermented beers, although to me saisons are the most appropriate style for brett-fermenting. This was a clearly excellent, well-crafted beer. Did I LOVE it? Not really, but it was good, and I appreciate the loving care and attention that clearly went into making it.

750ml bottle pours a hazy straw gold with some fluffy, white head. Aroma is a neat blend of both styles (wilds/saisons), loads of peach, honey, floral, straw, hay, touches of brett, light funk, dried lemon peel. Flavor is the same, very well balanced, more peach, but a little more nectarine at this point, grass, light wheat, lemon peel, light funk, earthy. Medium bodied, spritzy, refreshing finish. Well crafted.

Much better than the standard version. Instead of the fuckign salty grime it has a ncie dunk and pleasant malt profile.
