Late in November of 2011, Mike Rodriguez our head brewer asked about creating a Coffee and Cacoa Nib version of Serpentís Stout for the San Diego Strong Ale Festival. The beer was a hit with our fans. When we wrote up the syllabus for the Ultimate Box Set, we knew a version of this beer would be included. We waited until the very end of the release schedule to put this beer in a bottle so that the coffee and cacoa nibs really come through. Four Bourbon barrels were selected for their rich and dense chocolate flavors. One week before packaging, we added 17 lbs of Ryan Brothers Coffee and 4 lbs of TCHO Cacao Nibs were added to the coffee and cacao to steep before packaging.

Sampled from the tap at FOBAB 2012. Pours black with a dark brown head that dissipates to the edges. Aroma has lots of roasted malts with coffee and bitter chocolate backed by a sweet bourbon note. Flavor is much more bourbon forward with sweet dark grains and bitter coffee.

This one poured a darker brown color with a small brown head. Aroma was of mainly coffee and roasted malts. Not muh chcolate with light barrel. Flavor is very roasted and burnt coffee with light barrel to keep it form being too bitter, but the chocolate really isnt there much at all either.

Pailhead (5065) - Brownstown, Michigan, USA - NOV 17, 2012
On tap: The aroma consists of moderate roasted coffee and milk chocolate with a hint of vanilla. Itís a dark brown with no transparency and a small beige head. The flavor starts with a quick dose of chocolate and caramel. The finish has moderate-heavy roasted coffee with some light vanilla. Itís medium-full bodied with soft carbonation and mouthfeel. Overall, the coffee addition comes through more than the barrel aging.

Sampled as a bottle of Track 10 at the brewery. Pours to a pitch black body with a tan head. There were aromas of deep black malt and licorice. Chocolate and oaky bourbon. The flavor is a sweet chocolate, light bourbon, easy drinking coffee, and a light licorice. Very much like a chocolate coffee cake. Rich and sweet. Very smooth beer even though it is a very high ABV.

release at brewery . pours deep black , mild Thick tan head, huge aromas of coffee , Taste a Great Complexity of coffee beans , small choco taste. i absolutely dislike Black coffee . but i wish i had a cup of this every morning...

Track 10 bottle at the brewery. Oily pitch black pour, small brown head. Lots of coffee in the aroma. Sweet chocolate, cocoa, vanilla, strong espresso beans, light roasted malt, bourbon, and hints of raisin. A very nice rich imperial stout. Nothing too "out of the box" by todayís standards, but still huge vanilla, fresh coffee, and rich chocolate flavors. Tasty.

On tap at the tasting room. Aroma of toffee, caramel, chocolate and sweet coffee. Pours black and thick with sediment floating on top. Taste is super sweet with heath bar and cappuccino dominating the senses and slight prunes. Fantastic beer.

On tap at Copenhagen Beer Celebration 2012. A black one, topped by a small, tan head. The aroma has lots of coffee, a touch of licorice, some dark chocolate and cocoa, and quite a lot of roasted malts. Itís lightly warming on the palate, sort of boozy so I guess the barrel has some influence, full-bodied, dryish and still sweet. Loads of dark chocolate and cocoa in the flavor, with coffee blending in between. Lasting finish where the coffee are more pronounced than in the aroma and initial flavor, but with the same lovely dark chocolate and coffee. Wow, this is one hell of a beer.

Palme (3546) - Bergen, NORWAY - AUG 20, 2012
On tap @ Copenhagen Beer Celebration. A damn black one with a small chocolaty head. It has a strong chocolate and roasted aroma, lots and lots of chocolate actually. Also extreme amounts of vanilla and some dark coffee. Oh yeah! It has that woody vanilla touch, heavy roasted flavors, tons of quite sweet chocolate. Itís full-bodied with a average carbonation level. Lingering sweet chocolate flavors. Oh my what a beer! Coffee and vanilla in the finish. Could nibb on this all day long! 11.05.2012
