COMMERCIAL DESCRIPTION
Late in November of 2011, Mike Rodriguez our head brewer asked about creating a Coffee and Cacoa Nib version of Serpent’s Stout for the San Diego Strong Ale Festival. The beer was a hit with our fans. When we wrote up the syllabus for the Ultimate Box Set, we knew a version of this beer would be included. We waited until the very end of the release schedule to put this beer in a bottle so that the coffee and cacoa nibs really come through. Four Bourbon barrels were selected for their rich and dense chocolate flavors. One week before packaging, we added 17 lbs of Ryan Brothers Coffee and 4 lbs of TCHO Cacao Nibs were added to the coffee and cacao to steep before packaging.

Poured from a 375 ml bottle. Aroma is moderately bourbon forward with quite a bit of chocolate and lighter roast and coffee notes. Coffee is fairly fruity and works with the dark fruit and raisin notes in the beer. As it warms there is more coffee but also a slight green pepper note. Pours black with a thick, moderately sized, dark mocha that exhibits below average retention as it recedes to the edges where it lingers for a bit. Flavor is fairly sweet with a strong chocolate and coffee note. Coffee is definitely stronger than in the aroma. Moderate bitterness and a medium light alcohol note in the finish. Moderate bourbon notes mid palate with some light oak and faint vanilla and almond. Light dark fruit notes with some raisin. Light caramel and burnt sugar. Mouthfeel is full bodied with medium carbonation. Low astringency and medium low alcohol warmth. Overall, a nice beer with a lot of chocolate, coffee and bourbon character. Maybe I have had too many of these now, but it also doesn’t feel special - just middle of the road. Nothing bad though, just nothing that makes me go wow.

375 c&c from Capitol Beer in Sacramento, CA. Pours very black with a very dark tan smear. Aroma of mocha and booze. Nice combo. Med + body, maybe full. Flavor starts mocha, and then develops an amazingly strong dark treacle. Strong flavors. Heat is just another one of them. There’s a lot of bitter - cause there’s bitter burn on back tongue edges. Finally I realize there’s some bourbon. Wowsa!

Bottle from Capitol Beer & Tap Room. Pours near black with a thick light brown head and a coffee and chocolate aroma. There is an intense dark molasses flavor with lots of coffee and a chocolate finish. Nicely carbonated and very delicious.

Black/brown with a light brown head. Aroma is coffee, chocolate, toffee, dark fruits, touch of earth. Medium-full bodied, slightly creamy mouthfeel, lightly sweet on the palate with a balancing roastiness. Taste is coffee, chocolate, vanilla, bourbon, dates, figs. Delicious.

Pours a dark brown with a burnt chocolate lacinf. The aroma is coffee forward with notes of chocolate, vanilla and alcohol. The palate is too alcohol forward to be considered well balanced, but overall a good beer

Pour at the brewery a few weeks back on a whirlwind tour with t0rin0. Barrel, chocolate prevalent. Pretty good.

Pitch black pour with mahogany brown thin head... Aroma of dark chocolate, coffee, bourbon, vanilla, booze... Flavor is coffee forward, dark chocolate, bourbon more secondary, heat is fairly apparent... Nice

Taster glass at The Beer Store. Pours dark brown-black with a brown foamy head. Nose is dark chocolate, molasses, bourbon, vanilla, dried dark fruit, and apricot. Flavour is dark roasted malts, expresso, mocha, raisin, fig, dried apricot, with mild hops on the finish. Superbly balanced. Moderate body. Awesome.

375 ml. bottle. Pours black with a nice brown head. Aroma of malt, coffee, and chocolate. Taste is roasted malt, coffee, dark chocolate, bourbon, and vanilla. Well balanced. Excellent.

Lots of coffee and cocoa, bourbon very faint. Top shelf stuff. Bit of a sticky sweet finish. Good beer for a sunday morning.
