Late in November of 2011, Mike Rodriguez our head brewer asked about creating a Coffee and Cacoa Nib version of Serpent’s Stout for the San Diego Strong Ale Festival. The beer was a hit with our fans. When we wrote up the syllabus for the Ultimate Box Set, we knew a version of this beer would be included. We waited until the very end of the release schedule to put this beer in a bottle so that the coffee and cacoa nibs really come through. Four Bourbon barrels were selected for their rich and dense chocolate flavors. One week before packaging, we added 17 lbs of Ryan Brothers Coffee and 4 lbs of TCHO Cacao Nibs were added to the coffee and cacao to steep before packaging.

Pours rich coffee brown with a fairly thick dark tan head. Smoky malt aroma has strong overtone of high-quality coffee plus cocoa, earthy, bourbon and woody hints. Flavor is a symphony of roast malt, quality coffee, bourbon, chocolate, woody, earthy and molasses tones. Texture is firm and viscous, though fizz is none too strong; finish is smoky and earthy. Go like a bat out of hell to any bottle shop that has this available!

Bottle poured black with dark tan head. Fresh cut wood with Bourbon, followed with chocolate and alcohol. Love the balance of flavors. A rich blend of Oak, Bourbon, chocolate, vanilla. Great full palate. Smooth with burn. This would get better with a year of age. Must fine another bottle to save. Love the label.

Tasting at Matt’s, corked bottle, 13.5% ABV
Black color, brown head. Rich aroma of dark fruits, some roasted malt, and a prelude to the sourness. Smooth mouthfeel, rich chocolate flavor, a lot of tobacco, too much alcohol presence; some sourness from the dark malts, light liquorice, cocoa and coconut, a fruity note.

Bottle - Rich dark roast and roast coffee. Jet brown with a brown head. Light boozy, dark roast with a coffee, oily mouthfeel and a long finish. Nice.

375mL bottle, pours black with a small tan head. Aroma brings out lots of cocoa nibs and coffee upfront, followed by elegant bourbon barrels, and a slight touch of vanilla. Flavour is robust, with coffee upfront, followed by bourbon oak barrels and dry cocoa nibs. The coffee is the most dominant thing, the cocoa being second. All the elements are very cohesive and harmonious. Excellent stuff, just not worth $18 for a 375mL.

bottle, this was very nice. Good thick rich cococa body, good coffee flavor, then brownie batter bourbon treatment, warming alcohol on finish. Loved it.

375ml bottle pours a thick black color with a bit of brown head. Smooth chocolate a coffee. Bourbon overpowers a little. Smooths with some time to breathe.

Tap at Slater’s 50/50 - San Marcos. Pours opaque black with a small, fizzy tan head, short retention with spare lacing. Aroma is coffee, chocolate and roast malt with earthy notes, prunes and maple syrup with vanilla and bourbon notes. Flavor is sweet and rich dark malt and fruits, earthy and spicy coffee, vanilla and bourbon with light hops and bitterness with a sweet finish. Full body and medium carbonation.

Bottle at home. Pour is deep black with a creamy brown head and good lacing. Bitter cocoa nibs, roasted coffee beans, dark fruits, some raisins, light coconut, bourbon, roasted caramel, and toffee in the aroma. Taste is coconut, coffee grounds, bitter cocoa, toasted bread, toffee, bourbon, woody, and slightly tannic with some heat on the backend. Full mouthfeek with soft carbonation. Nice impy, although a bit hot. Could use a little more sweetness and perhaps a bit more time.
