Late in November of 2011, Mike Rodriguez our head brewer asked about creating a Coffee and Cacoa Nib version of Serpentís Stout for the San Diego Strong Ale Festival. The beer was a hit with our fans. When we wrote up the syllabus for the Ultimate Box Set, we knew a version of this beer would be included. We waited until the very end of the release schedule to put this beer in a bottle so that the coffee and cacoa nibs really come through. Four Bourbon barrels were selected for their rich and dense chocolate flavors. One week before packaging, we added 17 lbs of Ryan Brothers Coffee and 4 lbs of TCHO Cacao Nibs were added to the coffee and cacao to steep before packaging.

Bottle from the box set, with thanks to cocoapuph! Pours inky black with a bit of secondary dark brown head and a touch of lacing. Aroma is rich and decadent bourbon, chocolate, vanilla, coffee. Flavor is medium sweet and light plus bitter, a really nice blend of barrel and chocolate stout, a touch of coconut present as well. Full body, creamy mouthfeel. Very nice.

Dark tan head. Thick and lasting, but a bit small. The liquid is very dark where no light shines through. Plenty of blanketing lace on the glass. The smell starts with a sweetness I didnít expect. Itís almost like an after dinner drink. The taste is extremely rich, like biting into a rich brownie. Yet, itís not so sweet. Lots of semisweet chocolate. Chewy in terms of body with a light carbonation touch. The aftertaste is of dark malt and is long lasting.

Deep opaque black brown, light tan head. Heavy vanilla, molasses, lightly roasted coffee, maybe cappuccino. Light grain. Quite bitter, good sweet body. Very acidic, high effervescence. Not overly heavy, yet still pretty oily. Long finish. Really nicely balanced. Excellent.

Draft at EBF. Dark pour with a lacing. Coffee, roasted, chocolate and bourbon aromas. Nice chocolate, vanilla, coffee and roasted tones with a touch of bourbon. Smooth.

Sample at EBF. Pours nearly black with a coffee ice cream head. Aroma is chocolate, coffee, bourbon. Flavor is dark chocolate, bourbon, oak. A bit sharp.

Draft. Black. Tight lasting brown head. A nimble, easier drinking body. Coffee. Dark fruit. Bourbon barrel. Chocolate. Caramel. Awesome balance, nothing dominant. Fantastic aroma. Delicious! Warming alcohol. Tips towards sweet, just excellent. Like this a lot.

Bottle. Pours black with dark tan head. Aroma is very espresso, chocolate, sweet, vanilla. Taste is rich, very chocolatey, full bodied, medium carbonation. Overall, very delicious.

Well, as usual, a rare treat to have this on draft in Boston. Almost headless, assumedly opaque black body has a dark tan head that can be coaxed out with some swirling.
The aroma is sublime. Soft, succulent caramel laden espresso beans and graceful vanilla touches. Somehow completely devoid of fusels or oher alcohols....and i did let it warm fully. Chocolate is moderate and nothing here overpowers.
I wish I was as in love with the flavor, and to be fair, its deliciously chocolatey and richly malty up front. The finish is just overpoweringly astringent. Must be a mix of barrel tannin and coffee roast but Im just unable to get past it. Texture is silky, surprisingly light for its size with ample, tight carbonation.

Whale bottle thanks to bytemesis. Pours pitch black with a small brown head that dies quickly. Nose is super rich coffee and chocolate, moderate booze and vanilla. Taste is just as amazing and covers the three essentials of my favorite beer: coffee, chocolate, booze. A light to moderate alcohol warming. Seems to be smooth but builds as you sip. Overall, a very well made beer, and it combines everything very well. The high alcohol seems to detract a bit, and as I continue to sip, it even seems to be a bit peppery and hot. Overall, very good.
