Late in November of 2011, Mike Rodriguez our head brewer asked about creating a Coffee and Cacoa Nib version of Serpent’s Stout for the San Diego Strong Ale Festival. The beer was a hit with our fans. When we wrote up the syllabus for the Ultimate Box Set, we knew a version of this beer would be included. We waited until the very end of the release schedule to put this beer in a bottle so that the coffee and cacoa nibs really come through. Four Bourbon barrels were selected for their rich and dense chocolate flavors. One week before packaging, we added 17 lbs of Ryan Brothers Coffee and 4 lbs of TCHO Cacao Nibs were added to the coffee and cacao to steep before packaging.

2016-03-18. Black body with a small oily brown head that fades. 3++ Aroma is rich and intense with a sharp melange of coffee and dark malt. Flavour is similarly rich, oily dark malt coffee and cocoa. Lingering bitterness in the finish and aftertaste. Smooth average plus bodied palate, soft carbonation. Pleasant but thinner than I’d like the beer to be. 7/3/7-8/3-4/15-16 Bottle from Boston Wine Exchange, Boston.

Bottle. Cotteridge. 13.5%. Nearly black. Halo of dense, lasting, tan head. Nose has rich, thick, salty, dark chocolate. Some soy. Vanilla pod. Milky coffee. Taste is chewy sweet. Light, coffee bitterness. Mouthfeel is slick and oily. Boozy and mouth numbing. I think my teeth might be melting. Syrupy sweet finish. Some coffee bitterness. Big beer. Rich and smooth, but maybe lacks some finesse. Sank it easily, mind, and could no problem do another.

12.7 oz bottle. Pours an oily pitch black with a medium brown head. Aroma of bourbon, dark malt, soy sauce, cacao nib, rich chocolate and coffee. Taste is much the same as the aroma.

Pours oily jet black with no head. Aromas of tar, prunes, leather, bourbon, coconut, soy sauce. Taste is bourbon, boozy, soy sauce. Rich texture. Oily texture, boozy chocolate finish.

A corked and caged 12.7 fl oz bottle poured into a snifter glass. I believe this is a 2015 bottling as “2015” is printed on the neck. It poured an opaque pitch black with a thin less than half finger dark brown head that leaves nice stringy lacing. Aromas are strong bourbon and chocolate with some sweetness coming from hints of molasses, toffee and vanilla. Tastes of very nice espresso coffee, crunchy coffee bean, dark bittersweet chocolate and bourbon notes. Thick, full bodied with low carbonation and light alcohol warming. Overall, this was really good. It was surprising that there wasn’t much coffee on the nose, but it definitely came out in the taste. A great sipper on a cool night.

bottle poured into a snifter..opaque with a thin tan head..aroma of booze, chocolate,coffee,vanilla,wood..tastes like it smells..medium bodied..better as it warmed..good stuff.
