In July of 2009, the Matts and a couple of the guys flew down from Seattle to tour our hallowed halls in San Marcos, CA. In our barrel room they were drawn to brandy barrels of Angel’s Share, port barrels of Serpent’s Stout and red wine barrels of Gift of the Magi with brett. There were others, but as with all blends, it’s best to leave some things to the imagination (or the taste buds for that matter).

75 cL bottle. Pours dark brown with a small off-white head. Aroma is fruity and slight wineous, red grapes and brandy fruity. Acidic, winous and distinct fruity. Mild brandy touch to a heavy acidic brett/barnyard flavour swept in red grapes. Utterly lovely. Underlying dark malt flavour. Lingering acidic, fruity, dry brett and roasted malt finish.

Bottle 75 cl. Courtesy of Sean9689. Pours a hazy dark orangey brown with a rough, small and dissipating off-white head. Very tart aroma, lots of Brett, barnyard and blood. Medium body, heavy carbonation, dark dried fruits, wood and red wine with massive Brett, balsamico and barnyard. Sweaty indeed. Ends tart. Lovely. 221110

Courtesy of Brewdan. Brownish, no head, flat. Aroma has a decent acetone character, not much else. Flavor much the same. Pretty much one dimensional. Not their best offering.

750 ml corked and caged bottle, courtesy Beerlando. Pours a mostly clear dark mahogany color with a reddish hue and crowned by a small, but well retained kahki colored head of foam. Thin sheets of lacing are left behind on the glass. The aroma is really nice and complex with the barrels all contributing something different. Notes of vinuos red grapes and peppery spice come through at first followed by some earthy brett that adds some dryness. Further notes of caramel, vanilla, and bourbon push through and balanced by the sweetness of cherries, figs, raisins, and other dark fruits. The flavor follows and is just as great as the nose foretold. Figs, raisins, cocoa, and rich caramel form the base while dry, vinous grapes and fruit balance out sweetness perfectly. The brett adds a nice earthy quality to go along with dryness it adds. The base beers and barrels all add distinctive flavors that are easy to pick out and all are blended together masterfully. Full bodied and smooth on the mouthfeel with moderate carbonation that leads to a nice dry, sweet finish. This one drinks really easy for being such a big beer. This is a great beer all around and another world class effort from Tomme. I hope to have the pleasure of trying this again one day.

Bottle shared at jimmack’s 2010 Invitational. Poured an ugly muddy brown body with a small bubbly beige head. Aroma was interesting with notes of wine, wet wood, chocolate, cherry and sourness. Full foamy mouthfeel with medium carbonation. Flavors of sour chocolate, vinegar, cherry and red wine. Sadly I like the description far better then the beer.
