COMMERCIAL DESCRIPTION
American hopped saison.

Editor’s note: The 2009+ versions are spiked with Brett at bottling. Bottles from 2009 are marked as such, although 2010 and 2011 bottles appear to not note the vintage on the label, but might be printed on the neck or base.

Bottle. The pour was a hazy yellow with a huge (3-4 finger) white pillowy head that lasted a little while, receding to a large puddle and collar of residue, which had good spotty lacing. The aroma was of light grain and cereal malts, herbal hops and a funky Brett yeast with notes of citrus (orange and lemon), and a hint of spice (coriander and clove). The taste was a little sweet and a tad sour with a hint of citrus at first and then became rather hoppy with a slight bitter lemon peel presence and a mild peppery spice ending. The flavor lasted an average time proceeding the swallow, with a hoppy slightly sour peppery taste left to settle on the taste buds. Mouthfeel was just beyond light in body with a smooth dry texture and a prickly carbonation. Overall a refreshingly different Saison, with a nice sour spicy taste that had an outstanding blending with the hops...

It pours pale gold with a full white, long lasting head. It has a slight haze to it with Belgian lace as the head recedes. It has high citrus aromas with moderate earthly elements. It is moderately spicy with pepper. It has flavors highlight by high fruit flavors with citrus and orange. There is also a moderate blend of earthen flavors, spice, and pepper. There is a low sour element as well. The complex flavors work well together. It has high carbonation and a moderate feel. There is a low sour and bitter finish that is dry. Overall, this is a very complex blend of aromas and flavors in an ale highlight by citrus and yeast.
