COMMERCIAL DESCRIPTION
It’s an unassuming road leading to the priory. Here, off the corner of two intersecting roads, dedicated monks have been making beer for over 150 years. It’s always been a simple life – the kind that requires they brew only enough to sustain the activities of their monastery In the silence of passing seasons, they pray, they brew and retire in a solitary existence behind the sheltering walls. They live a most interesting life. Most likely one we wouldn’t sustain. Nearby, each summer, the trellised fields spring to life as rows of resinous green cones are trained toward the heavens. Rumor is some monks love these hops and being surrounded by budding yellow aromas and the leafy pungent fields inspires them. Since we weren’t sensible enough to locate our brewery near hop fields, we can only offer this blond ale in celebration of our Abbey brethren and their steadfast Devotion.

It is difficult to come up with much to say about this beer beyond the fact that it exemplifies the style very well. There are some interesting notes of champagne grapes and baking spices but overall this is somewhat underwhelming considering the grand pedigree.

Poured into a Duvel tulip from a 750ml bottle bottled on 6-28-2011.

A: Slightly hazy copper, amber, and straw colored depending on how the light hits my tulip. There’s a towering rocky light tan head that clings to the side of the glass as is dissipates. This is a gorgeous looking beer!

S: Light citrus aromas with light ripened fruits that I can’t place my finger on, with light floral aromas balancing out this beer. Smells complex and fantastic!

T: Slightly spicey with a light sweetness to this, there’s a light lemon bite here and just a light touch of floral hops at the end. Nice complexity and a delicate balance.

M: Full bodied with the soft carbonation making small sips fill the mouth.

O: Very crisp and refreshing, the complexity makes me want to keep sipping. This is a fantastic beer for the nice Spring days like the one we had today.

At the warm beer tasting, pours orange to yellow with a medium head, aroma of guava, yeast, bubblegum, apple, cheesse and some bret tones, flavor is lightly bitter with guava, apple and peach, medium to full bodied

UPDATED: JAN 23, 2012 Pour is a light golden brown color with a bone white head. Nose is of spices coming from the Belgian yeast. Taste is very consistent with that s of a saison, though rather good.

Bottle sample at a tasting at Dancing Camel. Thanks David Cohen. Pours gold hazy with some white foam. Nose - sweet, candy, toffee. Mouth - hoppy, bitter and really crisp. Dry feeling, fizzy, long finish and light body - I’d drink more of that.

Pours hazy golden amber with no head. Aroma is weak wheaty, some bretty yeasty notes, lemon peel, grassy, plants and some malts behind. Taste is weak funk, some brett, orange peel, grassy notes, weak barnyard and a dry mouthfeel.

Bottle sample at a tasting at Dancing Camel. Thanks David Cohen . Clear golden color. Fruity aroma with light spiciness and some floral and spicy hops notes. Sweetish fruity flavor with a bit of yeast and a dry spicy finish. Medium-bodied. Pleasant.

Pours a light copper color with aroma of wet fruit. Taste is slightly spicy with a hint of honey and pear fruit flavor. Aftertaste is of cloves mixed with a fruit cocktail and alcohol. Overall a decent beer.
