Commercial Description:
It’s an unassuming road leading to the priory. Here, off the corner of two intersecting roads, dedicated monks have been making beer for over 150 years. It’s always been a simple life – the kind that requires they brew only enough to sustain the activities of their monastery In the silence of passing seasons, they pray, they brew and retire in a solitary existence behind the sheltering walls. They live a most interesting life. Most likely one we wouldn’t sustain. Nearby, each summer, the trellised fields spring to life as rows of resinous green cones are trained toward the heavens. Rumor is some monks love these hops and being surrounded by budding yellow aromas and the leafy pungent fields inspires them. Since we weren’t sensible enough to locate our brewery near hop fields, we can only offer this blond ale in celebration of our Abbey brethren and their steadfast Devotion.

Not what I expected. Pours a dark hazy yellow with an off-white head. Nose is yeast, citrus, straw, pepper, and barnyard. Flavor is yeast, pepper, and citrus. A bit heavy in the mouth, the yeast hangs around with peppery bitterness. It straddles the line between golden, saison, and tripel with characteristics of all.

Tap at Pap. I was very impressed. TAstes like the nicest, cleanest Pale you ever had. Faint notes of cream, hops, and sweet orange. The finish is cloudy and textured and reminds me of what Orange Blossom used to be.

Pours a darker orange golden with small fine frothy white head. Aroma isnt particularly strong, sweet candi malt, orange peel, and grassy hops, almost seems like there is some coriander in there. First taste is quite bitter, some vitamin C, grassy and floral hops, light candi malt, some orange peel, lemon-grass and yeast. Finishes quick, dryer and bitter. Lighter mouthful, soft abundant fine carbonation, very light.

Pours a hazy golden colour with a soapy white head that has moderate retention. The nose is pleasantly fruity, with lemon zest, earthy, grassy hops and sugary doughy malts. The flavour is zesty, lightly fruity and bready with some farmhouse tartness just barley coming through in the finish. It is pleasant, drinkable and round on the palate. The carbonation could not be any better, being effervescent only on the palate and not in the appearance. A slightly slick and full mouthfeel also contribute to create a perfectly palatable beer. The finish is crisp, with spice, zesty hops and bready malts lingering for some time.

750ml bottle from the Sam-apostrophe-s in Downers Grove, IL. It pours a slightly hazed golden body with a somewhat rocky head that disappears in odd clumps. Spotty lacing. The aroma is honey sweet covered by dried lemon grass and citrus zest. Sprtitz mouthfeel. It tastes of sweet malt, herbs and warm spices, and a growing lemon zest bitterness. Not bad. Would be refreshing in warmer times.
