Commercial Description:
It’s an unassuming road leading to the priory. Here, off the corner of two intersecting roads, dedicated monks have been making beer for over 150 years. It’s always been a simple life – the kind that requires they brew only enough to sustain the activities of their monastery In the silence of passing seasons, they pray, they brew and retire in a solitary existence behind the sheltering walls. They live a most interesting life. Most likely one we wouldn’t sustain. Nearby, each summer, the trellised fields spring to life as rows of resinous green cones are trained toward the heavens. Rumor is some monks love these hops and being surrounded by budding yellow aromas and the leafy pungent fields inspires them. Since we weren’t sensible enough to locate our brewery near hop fields, we can only offer this blond ale in celebration of our Abbey brethren and their steadfast Devotion.

Bottle courtesy of Bu11zeye: Poured a deep clear golden color ale with a nice big foamy head with good retention and some lacing. Aroma of light brett with some Saaz hops. Taste is a mix between what appears to be light brett notes with some nice Belgian-type malt a dry noble hops finish. Medium body with some good carbonation. While I enjoyed that beer I have to admit that I will stick with DDC Dernière Volonté when I feel in need of an hoppy Belgian ale.

Hazy dark straw colour. Slightly barny, baguettey nose with ample continental hop goodness. Sweetish pale malts on the palate with a bitter, earthy, yeasty, dusty, bready character. Really pleasurable drinking.

Sample Hotshots Feb Indy tasting - Aroma is very yeasty with straw and Euro hops. Pours cloudy gold with a small head and decent lacing. Flavor is fresh hay, dusty cotton, subtle citrus hops, pale malts and yeasty bread dough. Palate is creamy, smooth and a little tart. Simplistic and refreshing, but not outstanding.

C&C 750. Some dried crusties around the cork, it weeped a bit at some point. Beer seems fine though, audible pop as the cork exits. Pours into my Karmeliet glass a clear gold with a big, foamy off white head. Sweet sugar cookie and orange nose, a bit yeasty. Flavor is more bitter than expected, a tangy orange/grapefruit, with a bit of grass and dust. Body is fairly well carbonated, on the light side of medium. Not bad.

a really good, light yet hoppy, belgian ale; very basic ale, a lot of yeast sediment; mellow, a bit and so just a bit... classic belgian? interesting, and so simple...

Nice golden color with a white head. Aroma of mellow hops , yeast and a little spice. Some slight carbonation. Light in flavor with a short lasting finish.

Bottle - pours a nearly clear gold color with a thin white head. Light body, low carbonation, mellow malty flavor with mild hop flavor and bitterness. Soft mouthfeel Late citrusy hop character with bitter accent. Nice yeast complexity, but not overpowering. A very nice blonde ale.

tap at the brewery - Pours hazy golden with a thin, lasting head. It has a slightly fruity smelling yeast aroma with some mild hops and malt. The flavor is of bread like malt and has a high amount of hops for a Belgian ale. Lively on the palate, it has a nice enough flavor though not much complexity.
