COMMERCIAL DESCRIPTION
It’s an unassuming road leading to the priory. Here, off the corner of two intersecting roads, dedicated monks have been making beer for over 150 years. It’s always been a simple life – the kind that requires they brew only enough to sustain the activities of their monastery In the silence of passing seasons, they pray, they brew and retire in a solitary existence behind the sheltering walls. They live a most interesting life. Most likely one we wouldn’t sustain. Nearby, each summer, the trellised fields spring to life as rows of resinous green cones are trained toward the heavens. Rumor is some monks love these hops and being surrounded by budding yellow aromas and the leafy pungent fields inspires them. Since we weren’t sensible enough to locate our brewery near hop fields, we can only offer this blond ale in celebration of our Abbey brethren and their steadfast Devotion.

750 ML bottle purchased at BevMo in Redding, CA. APPEARANCE / THE POUR: Dark golden color, looks similar to a pale ale. 2-finger white head that starts out dense, but collapses somewhat quick. Nice Brussels lace in trappist glass. Meniscus is fast rising, characteristic of a beer at 6.5% ABV. AROMA / BOUQUET: Grassy, hay, hops are in the forefront of this beer, with the 3 different yeast strains in the background. TASTE: This is more of a Belgian-style pale ale to me...Big hop presence, yet the Belgian character gives it a softness in the yeast character. PALATE: Dry entry, full-on hops astringency, black pepper mouthfeel. OVERALL: A well made Belgian ale (again I think its a Belgian-style pale ale) It is a well made beer. A good session beer.

This is one gorgeous looking brew! A hazy deep golden-orange color with a huge fluffy off-white head that has a mind of its own. Velvety texture. Flavor is hoppy and dry but otherwise kinda bland. I kept hoping for more citrus notes or some of other dimension. Still tasty, but not superb.

Kinda woody, kinda cloudy, really tangie flat...but Ill accept for the style. Good dried fruit, I am guessing it needs time to come around...may be too young or not stored well.

This poured a hazy yellow color with a white head. Aroma was of hay, grass, candy sugar, yeast, and lemon Peel.. Flavor was similar, a bit on the spicey side, lemony and sweet.

Strange but not bad, expected more spicy, sage and a weird lemon deal going on. Really really foamy. Guessing bottle conditioned and not stored correctly. Pretty expensive so I’d do it again if cheaper.

Tap at Roux Restaurant, Seattle. Pours a muddy orange brown with a white head. Belgian yeastiness aroma. Medium body, medium carbonation. Nice dry woodiness, orange, light candy, lemon... Slightly thin, but tasty.

Tap at hops and pie. Cloudy blood orange with a frothy white head that lasts and laces. Aromas of citrus, lemon, yeast, and spice. Flavor is the same, light bodied with a dry end.

Draft pour. Incredibly over carbed. Poor bartender. Aroma of white bread and pepper. Taste is thin, peppery, slight funk and tartness. Easy drinking, but a bit plain.
