Fermented and maturated in oak vats. No adding yeast. Spontaneous fermentation because of adding freshly pressed Barbera grapes juice that contains the skins, directly from a viticulturist near Alba. Brewed once a year at vintage time obviously. Available in 375 ml or 750 ml bottles.

Pours reddish brown with no head. Nose is grapes, grapes, grapes, vinegar, grapes and soil. The taste is a wonderful tart with a hint of bitter and some good sweetness. The mouthfeel is soft and sticky, the body is medium and the finish is long.

375 ml bottle thanks to Boutip. Nice clear red pour, white ring of foam. Aroma of cherries, syrupy, light vinegar notes, young wine. Taste of cherry juice, not as sour as expected, light sourness, sweet/sour finish. Palate is a tad syrupy, light carbonation, still quite easy drinking though. Decent.

Bottle sample at a tasting at our place. Thanks zvikar. Pours reddish burgundy colour, opaque, no head. Sour, old cherry, dates in the nose, sour, acidic, a little like buttermilk. No carbonation, medium body, smooth texture. Long, sour finish.

UPDATED: MAY 11, 2014 Bottle at the ChrisO Holiday Tasting, London - thanks to Colin for sourcing from Italia. (1/13/2013) Pours cloudy purple with a fine, filmy head. Ripe and tangy berry nose, raspberry especially. Light tangy berry flavor, moderately swet, some jammy fruits. Light bodied with fine, tingly carbonation. Fairly tangy on the finish with good, tart raspberry. Tasty brew. (3.8)

Draft at Copenhagen Beer Celebration 2014, Session 2. (5/2/2014) Pours hazy ruby with a creamy, pink head. The nose has light apples, old berries. Light sweet flavor, moderately juicy, with more berries and mellow funk. Light to medium bodied with average carbonation. Clean finish with good, lightly tangy berry fruits. Tasty. (3.7)

Tap at Moeder Lambic Fontainas. Brown red colour, pink bubbly head. Aroma very complex, every sniff it changes, funky, bit stinky, fruity strawberry, cherry, raspberry, bit of plastic, quite cheesy, sweet too but much better than I have made it sound. Taste is nice, lots of cherry, nice sourness, marzipan, sour finish. Bit of a sparkling white wine feel and taste. Very strange, but pretty nice. nice and bubbly, not really gueze like but interesting enough.

Bottle at ChrisO tasting, Domus Birrae Roma, 30/12/12. Obscured reddish brown with no head. Nose carries sour and tarte fruit notes, wood, piss, earthy and farmy. Taste follows, sour/tarte gooseberries, berry fruits, wood. Medium bodied, still with minimal carbonation leading to a sour finish. Excellent stuff.

At a tasting, thanks troubles, very hazy dark ruby read, aroma of red wine grapes, dark fruits and dark bread, fruity flavour with a complenting medium strong sourness. Extremely eazy to drink a lot of this. Original and very good.

Bottle sample at a sour tasting at Noam’s office. Thanks troubles. Hazy deep red. Aroma of wood, funk, vinous notes and a bit of leathery notes. Sour and pretty funky flavor with some grapes and light vinegar notes. Medium-bodied. Really good.
