On tap. Pours cloudy amber with a thin off white head. Aroma is caramel, yeast, wood, winey notes, some acidity. Taste is similar, some vinegar, lemon, funky notes, yeast. Medium body, watery texture, lively carbonation. Excellent.

Cloudy red. Sharply sour vinegary aroma. Just say no to acetic acid. Tastes even worse, it’s just vinegar - trashy soured wort. Fuck the current fashion for sours, this is shit. This is an insult to great breweries like Rodenbach, Liefmans, Cnudde, etc. who actually know what a red sour should taste like

Pours reddish brown with soft cream head, smell is red fruits, caramel, vanilla. In the mouth it’s soft and warm, nicely sour, lightly vinous, wood notes; long lasting sour and berries aftertaste. Excellent!!

Bottle pour into a wine glass. Pours a dark amber with a beige head. The adoma is musty and wine like with big oak. Pleasant medium bitterness that dries out nicely. Medium body and lower carbonation.

Aromas of apple vinegar, fairly sour and a bit of apple fruit flavors. Interesting a bit of aroma reminiscent of scotch! Spare head with an off-white head. Beer color is dark brown but with a distinct red cast. Taste has some sweetness, pronounced sourness and moderate bitterness. Medium body; average carbonation and a long sour finish. Overall. I like the diversity and uniqueness of this beer - sour, mildly fruity, aromas of mild apple cider vinegar and, most uniquely, a hint of scotch.

Deep chestnut red with some brigher strawberry tints on the edges. Small, off-white head is flimsy and recedes to a ring. Clarity is medium, though not murky/cloudy.
Pure, enjoyable acetic acid in the nose is wrought about woody, sawdust-like even, dryness with oily leather and deliciously aromatic malo and lactic acids. Almost smells of cherries, though there are none, with no alcohol or obnoxious tannin. Quite fragrant.
There are three things I notice most about the beer. First, the sourness is even and diversified. This is not a mouthful of balsamic vinegar like so many of its kind. Second, the beer is almost perfectly attenuated, with none of the "heavy acetic acid is balanced by a mouthful of chewy, near syrupy caramel malt" yet nor is it astringent and thin. And third, there’s a very distinct flavor that I can’t describe much more than to call it sawdust-like. Not nearly as bad as that sounds and not actually unpleasant at all. Perhaps old, well-worn oak with musty leather backing. Carbonation is tight and appropriate and no alcohol is noted. Very nice, especially on account of the balanced, yet still very sour acidity. A touch more brightness and complexity would make this a masterpiece. As is, I’m dearly sorry I’ve waited this long to try this brewery and will certainly be trying as many as I can get from now on.
