COMMERCIAL DESCRIPTION
Stop and smell the petals. Pistil is a summer beer unlike any other, brewed with a combination of dandelion petals, Pale and Acidulated malts, flaked oats, and Apollo and Northern Brewer hops that results in a one-of-a-kind beer with a slightly sour acidity and a smooth malt body. Perfect for taking down deep thirst.

Bottle. Head is initially small, frothy, white, mostly diminishing. Body is light to medium yellow. Aroma is lightly malty (grain, wort), lightly hoppy (herbs), with a note of butter. Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, lightly acidic, lightly to moderately bitter, unclean. Light to medium body, watery texture, lively carbonation. Raw malt and diacetyl in the nose, thin and watery in the mouth with a dirty aftertaste...what more could you want? Embarrassing.

Golden persistent half finger white head. Sour citrus flowery smell. Malty and sour to start. Fruity. Dry finish. Moderate body

Bottle. Pours gold with a white head. Flowery and a little earthy, with grass, lightly sweet malts, and the slightest acidity. Moderately dry finish. Pretty damn good.

Loose bottle from Mariano’s. Sweet, tickly nose. I poured straight into a Sam Adams glass to let the foam kick up, Find a few notes of a tart beer, a spongy head, and a light body like a pale cider. Slight tartness, more like a Bell’s Oarsman than anything, but a slightly denser pale malt body. Dandelion just seems to lend a slight bit of extra sweetness. A little gassy and bubbly.

Served to me as "dandelion beer" which is nice but nothing incredible. Floral, decent.

12 oz bottle pours a golden with an enormous amount of suspended floaties and a big, fluffy white head. Aroma stings the nostrils. Definitely floral, but earthy in a weird way. Flavor is very earthy, a bit sour. Kinda like a light Berliner Weisse. Also finishes slightly metallic, which isn’t very nice. Still wouldn’t be bad on a hot day while grilling.

12oz bottle. Yellow color, thin white ring. Aroma of sweet malt with, ODDLY enough, dandelion flowers. The scent of flowers is very faint in the nose, you really have to look for it! Very easy to drink, earthy character. Pale malts flavor in the finish, along with some flavors of hops, and an unfamiliar grassy taste. Definitely some sort of bitter flower/plant flavors are lingering in there. Some bread flavors in a dry finish. If the was not marketed as a Dandelion Ale, I probably would have thought it was an off flavored Magic Hat. (3669)

UPDATED: JUN 15, 2013 Pours a hazy yellow with a frothy white head that sticks around for awhile. The smell is sweet, malty, with some yeast and floral notes. It has a nice sweet background that is harder to describe but like the smell of a nice summer night. Taste is not nearly as sweet as the smell would have indicated, the flavor starts malty but moves into a unique bitterness, that does not taste like hops. I can only assume this is from the dandelion as this is my first dandelion beer. The bitter sticks around through the aftertaste, and gets stronger, almost to the point of a lip smacking bitter. The mouthfeel is nice a crisp light beer, smooth and easy to drink. If the bottle didn’t display the dandelion I would have had a hard time guessing that one. No overpowering flavors, a nice enjoyable beer, overall it is well done. ---Rated via Beer Buddy for iPhone

On tap at the brewery. Pours a clear gold with minimal white head. Overall some garden notes of dirt and flowers with a moderate level of diacetyl. Some flower sweetness and some faint presence of lactic acid. Light body. Diacetyl really gets in the way here.
