(Draught) Pours a black body with a medium beige head. Aroma of roasted malt, earth, subtle smoke, and salt. Flavor of roasted malt, salt, earth, lightly burnt grain, cocoa, and grass.

From the Jug at the GABF, Colorado Convention Center Denver 18/09/2010 Slight roast aroma. Dark coloured and rich on the palate with some alcohol present. A hint of bitterness in a smooth oyster roast finish.

On tap at the brewpub. Pours jet black with a thick tan head and a chocolate and coffee aroma. There is a chewy coffee flavor and a bit of shellfish with a dry finish.

Sampled at the Great American Beer Festival on September 16, 2010. Pretty dark, solid black with a pretty full, frothy light brown head. Oooh... smells strongly roasted. This is definitely on the drier side of stouts. Smooth, silky, but not setting well in my stomach right now.

Not sure how I feel about a stout brewed with oysters but here it goes. Black with a fizzy white head. Sweet chocolate and molasses aroma. Chocolate coffee and a pungent earthy taste with some shell fish notes in the finish.

There is a really rich flavor profile to this beer. It is well balanced between all the components, yet has a smokiness the permeates and cuts through the roasty flavors. It begins with chocolate, toffee and a slight yeastiness, and ends somewhat dry, smoky and slightly bitter.

(On tap) Black and opaque with a light brown head. Burned, malty aromas with a touch of malt. Medium-bodied with roasted or even lightly burned malt notes and again a touch of salt. Some malty bitterness. 210307

Draft at the brewpub. Poured an opaque black color. Head was tan and settled quickly, but left some decent lace. Attractive aroma of roasty malt, chocolate, and vanilla. Dry on the tongue with a big roasty/smoky flavor reminiscent of peated malt. There was also some dark chocolate. Unique, delicious stout.
