COMMERCIAL DESCRIPTION
This is a medium-bodied, off-dry mead, made with a cider-pressed apple blend that is predominantly McIntosh. It has a bursting tart apple flavor with a crisp finish. Green apple dominates the palate but subtle floral notes from the honey come through in the aroma and after taste. The acidity from the Macintosh apples makes this mead very food-friendly. It can be enjoyed after dinner on its own, or paired with pork, poultry or strong cheeses.

A pale cyser with aroma of green apples and honey, cloves, light astringency. In mouth, a nice tart green apple, bubbly mouthfeel, light clover honey, not bad. On tap at Farmhouse Tap and Grill, April 7, 2012.

VTHopHead (1387) - Barre, Vermont, USA - MAR 10, 2012

Draft at Three Penny Taproom - Poured a clear light straw yellow in color with a small bubbly head that disappeared quickly. Aroma is strong of both apples and honey, as you expect. along with the tiniest bit of "funk". Flavor is medium sweet and, again the honey and apples dominate. Not much evidence of the considerable ABV. Very nice!

On tap at the Farmhouse Tap and Grille Burlington VT. Pours a crystal clear golden amber color with a smattering of tiny bubbles that dissipate almost instantly. Smells of apples, honey, brown sugar, and a hint of sulfur. Taste is sweet with sugar, honey, and apples. Medium body with a semi sweet palette. Nice cyser, and definitely a contrast to the ipa’s I’d been drinking,

(750 ml bottle from Rising Tide) Sampled lightly chilled. Pours clear pale gold with very fine bubbles in the body. Aroma of apple, mostly sweet but with hints of tartness, and sweet honey nectar. Mouthfeel is light and vinous, slight stickiness. Droplets and light trails of lacing. Flavor of apple, light honey sweetness and bready yeastiness in the finish. More flavorful as it warmed. A little hot but ABV is mostly under control.

Had this hot, cold, mixed into a shot, and room temp. It’s great every time. Aroma is apples and honey. Flavors are nice honey sweetness up front and a minor apple acidity in the end. This can be had many many ways and it’s always great!
