COMMERCIAL DESCRIPTION
A lustrous honey wine with a citrus-like floral aroma. The smooth buttery flavor of honey yields to a subtle, smoky earthiness and a dry refreshing finish. Decanting or allowing it to breath is recommended to release the delicate honey flavors. Serve chilled. Pairing suggestions: Smoked seafood, scallops, lobster, spicy dishes or cheese.

Tried this at the meadery. Pours a clear gold. Soft honey on the nose. Light fruit and soft melon. Fruity with a gentle bit of pear. Warm and dry.

Bottle @ Arminís house. Thanks Armin! Clear light yellow, white wine aroma. Very fruity, apple, pear, tons of apricot, a bit dry aroma. Fairly light bodied, white grape, apricot, pear flavor. Lots of light fruit.

Poured from a bottle at the Novare Res Bier Cafť in Portland, ME. Pours a crystal clear, basically water colored body with just a tint of yellow. Aroma is sweet and dry with honey, florals, and a touch of citrus and apple. Flavor is similar. Sweet honey and lots of florals up front before a nice citrus and light apple comes in. Some pear shows up a bit at the end with a touch of tartness as this finishes dry, but slightly sweet before leaving a lengthy aftertaste following a light body. Overall, Iím fairly new to the mead game, but this was alright. A bit sweet despite the dryness with lots of florals and a touch of tartness. Nice mead.

UPDATED: MAY 2, 2012 Pour out of 750 mL is clear yellow, golden. Nice aroma of grape, floral notes, some nice honey and slight earth tones. Taste is a nice mix of dry peach, pear and floral honey, hints of slight drying earth but finishing on the sweeter side for a dry mead. Pretty tasty overall.

Pours a nice gold hue. Nice are as of honey, citrus, and light apple. Flavor is nice with a good honey backbone. Light citrus and wine like notes in the finish. On the dryer side but not real dry which is a good thing in my book.

Taste from a 750 ml bottle at the meadery. Has a totally different description here than on the sheet they gave me. Maybe that affected the expectations of the other raters. Pours a clear, pale yellow gold with some legs. Very dry aroma of oak, apples, honey, and floral notes. Flavor is almost exactly the same. Light-bodied, with a dry, floral, sweet, and tart mouthfeel.

1/21/10. Bottle. Dry honey aroma that reminds me of old people smell. Dry winey flavor with a honey kick. Watery.

First to rate, 750ml bottle courtesy of Tim and Rachel, this is an extremely dry mead, like white wine with a bit of added honey, very watery.
