Aroma is lightly malty (toasted grain), moderately hoppy (lemon, flowers), moderately yeasty (dough, cobwebs, mold), with notes of mint and alcohol.
Flavor is heavily sweet, moderately acidic, moderately bitter.
Finish is moderately sweet, moderately acidic, heavily bitter.
Medium body, creamy texture, lively carbonation, moderately alcoholic.

Poured out of 750 mL bottle, sampled at Pizza Port 12-Hour Belgian Fest ’05 in Carlsbad, CA 3/19/05. Hazy golden. Fluffy eggshell head, slightly beady. Lacing is good-- sticky, ribbony. Very nice aroma of light vanilla and sweet spiciness. Strong fruity esters. Very yeasty pepper and faint sourness. Hints of apple and tart, crisp yeast. Alcohol melds nicely. Peppery green olives in the background. Very herbaceous with stately aged hop dry-bitterness. Clean like a Snuggles dryer sheet. Malty finish with lovely spritzy carbonation. A wonderful spice finish, clean and a touch fishy-- I bet this would be awesome with seafood. Wonderful, soft carbonation, slightly silky and fluffy. Amazing aroma and flavor of spices, fruits and champagne yeast with a mild bitter finish. Full body, dry texture, lively carbonation. Wow !
