This beer is a continuation of our quest to produce distinct beers using local indigenous ingredients. Wild Sierra emulates spring in the Sierra with the snow melting out of the forests and giving way to fruity/spicy aromas of the trees with a touch of earthiness from wet soil. Mountain farmhouse style is very alive with active cultures of wild yeast continuously changing the flavor profile. We use Belgian ale yeast, Saison yeast, and wild yeast harvested off of local Piñon Pine needles in the brewing process. Our wild yeast also contains Lactobacillus which lends a refreshing tartness to the beer.

22FL OZ ($4.99 bottle) this was a really cool find. Have no idea why the ratings are so low for this beer. it was great. felt like a great saison. had the power and the good flavor, tad sour but nothing over done about it. could have used more carbonation though.

Starts off with a past-its-prime handmade corn tortilla aroma along with dry hay. Hazy medium yellow with a nice foamy white head. The tortilla aroma follows slightly into the taste, but it blends in with the hay and quite pronounced peppery and coriander spices to become a really nice flavor. This is definitely a Saison with the spice and barnyard components, but it has a bit more body than some versions. I didn’t think I was detecting the pine needles at all, but now I’m thinking that might be where some of the spice is coming from. Nice caramel and honey sweetness balances the more earthy components perfectly. Finishes very long and spicy for a Saison and definitely makes you want more. Excellent seasonal from a brewery I’m not very familiar with but now want to be after trying this.

Golden yellow with a thick haze, gigantic ricky bright white head and excellent lace. Aromas of barnyard funk, pine, lemony citrus, peppery spice, Belgian yeast and grainy malt. Light bready malt flavors with fruity yeast, black pepper, resin and lemon. Light body, mdeium carbonation, creamy mouthfeel and a crisp dry finish.

Bomber from Imbibe Wine. Nose is honeycomb, floral, and a light casaba note. Clear yellow orange with a big heavy lacing off white head. Flavor is lightly sweet and fruity with a slight hint of funk that is barely discernable. Not all that wild or saison like, tastes like a light weaker Belgian dubble style to me.

Smells of corn and honey mostly, some yeast comes through. Way too sweet and has no pine or hop flavor. It kind of reminds me of El toritos sweet corn cake. there?s a good bit of carbonation but it doesn?t lend well to the taste. Not very well executed, I was looking forward to a saison with a bit of pine but ended up with a drain pour

Bomber. Fairly floral on the nose, hints at tropical fruits almost, slight nod to pine. Not much grass on the flavor, fairly wet on the malt, and not really tart whatsoever. Mostly fruity flavors abound. It’s a good brew, just not what I was expecting reading the bottle. Extra point for using indigenous yeast!

"Mammoth says theres yeast from piñon pines, which explains the herbal pineyness in the aroma and flavor. Not too wild, but it’s young yet, and works quite well as a nice floral saison.

Fad: Taster på bryggeriet. Lysegul uklar øl. Duft af banan og gær, minder lidt om en hefe men så alligevel ikke. Smagen er præget af citrus og saison. Fin øl der helt klart virker.

~12 oz draft at the Curry Village pizza spot in Yosemite, California. The pour is hazed golden yellow with a smallish white head. The aroma is herbal, traditional Belgian yeast notes. The taste is the medicinal herbal of the nose, with a bit of sticky sweet malt then the Belgian yeast carries the finish. The palate is medium to heavy bodied with low carbonation and an earth medicinal herbal yeast finish. Pretty typical American Saison.
