COMMERCIAL DESCRIPTION
This beer is a continuation of our quest to produce distinct beers using local indigenous ingredients. Wild Sierra emulates spring in the Sierra with the snow melting out of the forests and giving way to fruity/spicy aromas of the trees with a touch of earthiness from wet soil. Mountain farmhouse style is very alive with active cultures of wild yeast continuously changing the flavor profile. We use Belgian ale yeast, Saison yeast, and wild yeast harvested off of local Piñon Pine needles in the brewing process. Our wild yeast also contains Lactobacillus which lends a refreshing tartness to the beer.

"Mammoth says theres yeast from piñon pines, which explains the herbal pineyness in the aroma and flavor. Not too wild, but it’s young yet, and works quite well as a nice floral saison.

Fad: Taster på bryggeriet. Lysegul uklar øl. Duft af banan og gær, minder lidt om en hefe men så alligevel ikke. Smagen er præget af citrus og saison. Fin øl der helt klart virker.

~12 oz draft at the Curry Village pizza spot in Yosemite, California. The pour is hazed golden yellow with a smallish white head. The aroma is herbal, traditional Belgian yeast notes. The taste is the medicinal herbal of the nose, with a bit of sticky sweet malt then the Belgian yeast carries the finish. The palate is medium to heavy bodied with low carbonation and an earth medicinal herbal yeast finish. Pretty typical American Saison.

Orange and lemon in the aoma, very fruity but a much better fruitiness in flavor than the hefe or summer session. Really an outstanding beer in my opinion. Smooth and creamy; a home run.

Spring 2013 bottle thanks to TWalls. Pours with a hazed golden yellow hued body and a large fluffy white head with good retention and lace. Aromas are of isoamyl acetate, spruce, herbal hops, peppery phenols, light Brett and pine, medium malt, low fusel alcohol. Something a touch spicy that I cannot place. Flavors are medium malty, biscuity and toasty, mildly earthy, clean, crisp, some earthy and lightly nutty notes, low tartness. Decent saison. Easy to drink. Peppery, earthy, odd spice finish. Not bad at all. A bit of (at least perceived) residual sweetness in the finish.

Pours a cloudy golden yellow with thick creamy white head. Yeast, malt and a sour aroma. Crisp yeast, malt and fruit flavors with a slightly sour smooth finish.

Bottle pour hazy yellow. Nose of sour, clove, spice, tart fruit. Taste similar, with candy sweet and clove. Just a hint of sour in the finish. Taste like a Belgian, decent drinking, but not the taste expected for a wild.

22 oz bottle shared with the group. Pours a hazy golden color with a small white head. The aroma has yeast, light funk, grass, light tart character and hints of spice and fruit. The flavor more of a Belgian ale character and no dour notes. It could be a sweet saison as well. Did not meet expectations.

A - pours hazy light golden straw with almost no white head. S - strong aromas of honey, funk, cloves, oranges. Hunts of hay and earth. M - light bodied beer with medium funky palate. Dry with high carb. Lingering tang and sticky end. T - honey, did I say honey. Funk, sweet tarts. Tangy sweet apples. Sticky malty end. O - pretty good, too much honey and too sticky. 6
