Cidre AOC/AOP Pays d’Auge demi-sec – Récolte 2012

Médaille d’Argent au Concours Général Agricole de Paris 2014

Les pommes utilisées pour l’élaboration de ce cidre AOP Pays d’Auge proviennent de nos vergers installés sur des sols argilo-calcaire. Le subtil assemblage de plusieurs variétés de pommes, parmi les plus traditionnelles et typiques du Pays d’Auge, assure à ce cidre un bon équilibre entre sucre, acidité et amertume.

Après pressage, le moût obtenu, 100% pur jus, fermente lentement sous l’action des levures naturellement présentes sur les pommes. Il faut environ 3 mois de fermentation pour obtenir un cidre demi-sec (4,5° vol. d’alcool). Le cidre est alors mis en bouteille où les levures vont prolonger la fermentation pour assurer la prise de mousse. Il faut environ 3 mois après la mise en bouteille pour obtenir un cidre à la mousse fine et pétillante.

Bottle. Hazy yellow orange. Aroma is mild cheese, funked apple, bread, brown sugar. Taste is sweet. High carbonation, but leaves a crispy mouthfeel at first. Once carbonation subsides with swirling, it gets sticky.

UPDATED: JAN 23, 2015 2013 vintage - golden and cloudy cider with a lot of fizz in the galss and a small white head. Slightly farmy whiff on the nose! Very fizzy in th emouth. Full of apply flavour, quite sweet and a nice finish. 2012 vintage - golden in colour with a fizzy white head. Hardly any nose, just the tiniest sweet smell. Ver fizzy in the mouth. Quite a sweet tasting cider, not tons of flavour. A bit sweet for my taste. (2012 score was 2.9)

UPDATED: SEP 5, 2014 Bottle bought direct from the cidery visited while doing the cider trail. Aside from the cider itself the farm tour comes highly recommended. Sampled later at the campsite. The 2013 vintage pours amber with some white froth. Initially sweet with plenty of fizz on the tongue. A pleasant apple taste with a clean finish. refreshing and quaffable. Nice. The 2012 vintage was amber, clear and sparkling with a little crisp dryness on the finish. Average score given.

750 ml bottle. Pours amber with big head and lots of carbonation. Aromas of barnyard, wet wood, orchids, and rotten apples. Flavors of over-ripe apples, lemon soap, and mould.

smells like an orchid with some earthy components nice cloudy goldish/orange color tastes like barnyard and apple juice really good also fermenting apples a little extreme just for one person unless thats what your in to all around pretty damn good cider nice dry after taste not to sweet in the least bit.

Bottled. Hazy golden, coarse head. Lambic and red berries up front. Blue cheese, sugar and rubbery smoke. Fruity and salty with light body. Interesting and richly flavourful but with some weird edges.

2005 bottle. Sent in a photo to upload. No, this bottle was not agitated, i have let it sit for a while, and it did not travel. Started off as a gusher, cork popped as soon as I started to undo the metal ties. Gushed for about a minute. Opaque fizzy yellow appearance. Slight barnyard funk to the aroma, but not as bad as some others. There is also some plastic and then the apples and maybe some eau poire. Very very very very fizzy. First sip nearly went up my nose with all the bubbles. I couldn’t taste anything at first, just trying to overcome the carbonation. It is inexcusable. Much fizzier than a sod, have problems getting it down, let alone anaylzing the flavor. From what little I could get it is sweet with some woody elements. Hard to drink as each sip = 1 burp. Let my glass sit for a while, and bubbles were still rising vigorusly 30 minutes later. Something is wrong with this one.

2005 bottle from a gourmet shop in Paris, only 6€. Tart, umami, cilantro and oxidized apple aroma. Sweeter flavor, rice and peach flavor. Very light and drinkable, relaxing. Pretty nice.

Bottled, vintage 2004. Maybe it’s just me but I hated this cider. I’m not used to drinking it, but the first Lambic I ever had wasn’t my taste either. But for the Lambic I was impressed with the quality and balance. This cider doesn’t have that. The aroma is interesting with wood, yeast and gunpowder(?). Hazy, dark yellow color, sparkling. The flavor however was near to unbareable. Light sweet, hints of apple, loads of yeast and above all very chemical/medicinal. Very unbalanced in the flavor with a dry and metallic mouthfeel.
