Witty Monk is our unique take on Belgian wheat ale. The Belgians are known for their individualistic approach to creating beers. In that tradition, we have created this wheat beer using North American malts and hops, a Belgian Trappist yeast strain, and a little-known spice from West Africa called Grains of Paradise. The resulting brew is left unfiltered, and, therefore retains a cloudy appearance and a bit more of the spicy, dough-like yeast character. It may be different, but this beer is no joke!

Tap at the brewpub. Pours very hazy gold with a foamy white head. Aroma is yeasty fruity. Med body. Flavor is wheat, but there’s some banana ester and other fruit; some yeast. A little earthy. Maybe more than a little. Sort of a very different hefe in a way.

Tap: pale, hazy yellow with small white head. Aroma is yeasty caramel with citrus. Flavor is caramel sweet with soft orange, honey, a slight yeasty spice and a light toasted bread. Decent beer, a bit too sweet and lacking in the spicy kick I like in wit beers.

Draft at City Beer’s 5th Anniversary. Hazy pale golden-beige in color with a one-finger white head. The aroma is typical of the style, wheaty and yeasty with orange and coriander. The flavor is also fairly standard, well done but not a standout, with Belgian yeast, wheat, spice, and citrus peel. Medium-light body with medium-plus carbonation. A solid but very standard witbier overall.

On draft at the brewpub this came in the glass slightly hazy yellow with a small foamy head. Nose citrus hops with some coriander, Body is medium with nice mouthfeel. The flavor is very much full of spiciness and some ripe fruit in the background. The finish has a sourness that lingers and overall the result is a very nice drinking beer wiht lots of character.

On tap at Rubicon during Sacramento Beer Week. 10 ounce sample. Citrus, lemon, coriander notes in the aroma with a background of sour astringency. Doughiness also comes through. Decent aroma. Mostly hazy yellow body with a small, white, bubbly head. Starts with a little citrus lemon astringency before this smooths into a nice doughy maltiness in the middle. A little spiciness comes in later to finish. A little light, and seems a little lacking in the body, despite the fact that this has a nice flavor profile.
