COMMERCIAL DESCRIPTION
Witty Monk is our unique take on Belgian wheat ale. The Belgians are known for their individualistic approach to creating beers. In that tradition, we have created this wheat beer using North American malts and hops, a Belgian Trappist yeast strain, and a little-known spice from West Africa called Grains of Paradise. The resulting brew is left unfiltered, and, therefore retains a cloudy appearance and a bit more of the spicy, dough-like yeast character. It may be different, but this beer is no joke!

Keg at the brewpub, 29/01/16. Lightly hated yellow golden with an off White head. Nose is floral, coriander, lemon rind, straw. Taste comprises light bread, white pepper, lemon tinged straw, yeast esters, floral rinse. Medium bodied, fine carbonation, semi drying close. Solid for style ... ticks all the boxes.

On tap @ brewpub during RateBeer weekend, January 2016. Hazy, light yellow appearance with a white head; it looks fantastic. Soap, spice, potpourri in the aroma. The flavor is pretty floral and herbal. A little too soapy. The flavor was a little less than impressive to me but it’s a beer I’d like to give another shot in the future.

On tap @ Marin. Pale golden beer with a white head. Decent banana esters going on here along with a touch of coriander and white pepper. Some lemon, orange peel, and grass. Subtle tang and bitterness to go along with the sweetness of bread and biscuit dough. Nice enough body and mouthfeel. Actually not too shabby.

Draft at the brewpub, served in a flight. Pours a pale yellow gold with a small white head. Notes of banana, coriander, wheat, clove, florals, and lemon. Light-bodied, with moderate carbonation and a dry, wheaty mouthfeel. Pretty simple, straightforward witbier.

Draft at Marin Brewing Company. Pours hazy yellow with a creamy, white head. The nose holds light yeast, crispy wheat, biscuits, lemon peel. Light to medium sweet, with more biscuits, light bitter hay, yeast, dough. Light in body with average carbonation. Moderately sweet on the finish, with continuing doughy wheat, hay, lemon peel. Easygoing, pretty tasty.

Draft to taster at the brewpub. Looks solid; a hazy pineapple with white head that steadily dissipates into lacing. Smells of heavy Belgian yeast and clove. Tastes like it smells with a bit of peppercorn as well. Mouthfeel is medium-bodied. Okay, but too yeasty for my preference.

Sample on tap at the brewpub. Hazy yellow pour with thin white head. Aroma of banana, yeast, phenolic, very light spice, fruity, not very belgian. Taste is wheaty, fruity banana. Palate is med bodied, a little syrupy. Average, a little off style.
