Head is initially average sized, frothy, brown, mostly lasting.
Body is dark brown to black (non-opaque).
Aroma is moderately malty (roasted grain), with notes of tree bark, sage/thyme, licorice, sassafras.
Flavor is moderately sweet, lightly bitter.
Finish is lightly sweet, moderately bitter.
Light to medium body, watery texture, lively carbonation.
While the aroma isn’t unpleasant, it’s a bit medicinal and not very beer-like. The yerba mate characters would have been nice enough as accenting notes, but not so much as dominant ones. Quite watery in the mouth, but the flavor balance is reasonable. Not something I’d buy again, but ok.

From a 22 oz bottle this poured a dark brown with a fat tan head and lots of lacing. Nose of roasted malts with some coffee and chocolate. Medium body and smooth mouthfeel. Flavor is roasted malts and the finish is dry. Not the best schwarzbier ever, but easy drinking and enjoyable.

22 ounce bottle purchased from the Davis Food Co-Op. Aroma is rather herbal, spicy, and smoky. Light chocolate roasts are also there, but this is dominated by the Yerba Mate herbal aromas. Mildly transparent mahogany body with a nice tan head that has good head retention and fair lacing. Start has a little bit of an astringency with some of the herbal flavors present. This quickly fades and becomes quite roasted and chocolatey in the middle with good body. This is followed by some more astringency before finishing with the taste of green olives. I find that the Yerba Mate imparts a green olive flavor on this series of beers.

Sasparilla dark brown body with moderate cream foamed head. Dusty, nutty, slightly metallic nose. The body is rather lackluster. Medium-bodied with a dull, musty, cardboard nut flavor. A ragged and worn tasting beer.

Not the best Schwarzbier I’ve had, but I did like how it meshed with the Yerba Mate. (Granted, I did drink this one warm at the top of a mountain.)

Bomber poured a clear dark reddish brown with a lasting tan head. Aromas of coffee, charcoal and roastiness. Palate was light to medium bodied and smooth with a dry finish. Flavors of charcoal, roastiness, light coffee and light cola with a smooth dry lingering roasty finish. How come so many organic beers suck?

22oz bottle from BevMo La Mesa. Pours opaque dark brown with a frothy beige head, some spotty lacing. Nice nose of light grassy hops and medium roasted malts. A pretty tasty brew.

Bottle. Blackish beer with a dark cream colored head. Light roasty aroma. Roasty, light malt flavor with mineral notes. Medium bodied. Mineral and light roast lingers with light caramel and a light herbal note.

UPDATED: MAY 16, 2010 Tap at the Raley Field Brewfest. Pours black with a slight head. Mild burnt malt aroma. Slightly sweet; mildly hoppy; lightly fruity; definitely smooth burnt malt. Very pleasant. Seems a bit sweet for a schwarz.
