La madre di tutte le birre

Birra chiara leggera tipo Lambic, più delicata, meno estrema, fatta fermentare con il lievito madre da panificazione. Se il Lambic è l’anello mancante tra la birra e il vino, Birra Madre…

…Birra Madre nasce dall’amore per il pane, simbolo della civiltà contadina, prodotto di fermentazione del cereale come la birra; dall’amicizia con Davide Longoni, grande panificatore in Realdino, località brianzola sul fiume Lambro; e dal fascino che hanno su tutti noi le birre Làmbic, tipologia belga a fermentazione spontanea in cui “rivive”, presa dall’aria, tutta la flora microbica della valle della Senne (Bruxelles).

Noi abbiamo fatto qualcosa di simile: abbiamo preso il lievito madre di Davide e abbiamo fatto “vivere” la nostra birra con il fermento del suo pane, che è in equilibrio microbico con l’ambiente esterno e comprende in sé i lieviti e i batteri autoctoni di tutta quest’area, la valle del nostro amato (e tanto martoriato) Lambro.

Il risultato, come per i Làmbic, è una birra particolarissima, secca e sapida, vinosa e sidrosa, con un retrogusto decisamente acidulo e i sentori minerali e organici tipici della pasta madre. È il nostro Làmbic sul fiume Lambro (scherzosamente detto Làmbric…), maturato in botte nove mesi e fatto uscire a febbraio in due versioni: normale (senza schiuma) e rifermentato in bottiglia (la Gueuze brianzola: la Gazeuse!…).

Se la birra e il pane sono forme di presentazione dello stesso prodotto, questa birra è l’anello mancante tra la birra e il pane. È la Madre di tutte le birre!

Il disegno in etichetta è di Enrico Mason, artista e ideatore della Befana sul Lambro.

37,5cl bottle, year 2012, teku glass. Pours into the glass with no head at all; very slighlty cloudy full golden, apple juice like, colour. Smells actually almost identiacl to a lambic, with those particular acidic, bacteria and yeasty notes, pronounced cider like charcater, basement, wood and river side aroma. Tastes apples, sourdough paste, vinous, bit lemony and bubblegum; medium quite dominant sweet note, moderate and smooth acidic note. Really any carbonation, zero, the body is so thin it seems water. Fruity, dough and yeasty aromatic finish. Not bad at all, aromas and notes are fine, but the body is really so much and that alone ruins quite much the whole beer in my opinion. Also a bit too much for sweet in my opinion, especially for the genre. Still remains a nice and respectable attempt to brew a spontaneous fermentation beer outside Belgium , and by the way the nose is great !!

Thnx ! To Michelle ’ The beerhunter ’ Pours rather unclear blonde . no head ( whatever I try ) Smell is funky ,dry , wood , very barrel-forward . Taste is bit sweet. Much apples .Some earthy note almost. bit dry , not much carbonation . Not supergreat for a Geuze . Flat and too sweet . Dry finish ... Don’t like it I’m afraid ....

Bottle shared at a tasting at Beer Market Jaffa. Thanks Mortlach for this bottle! 2011 bottle. Hazy yellow. Great funky barnyard aroma with a bit of vinegar notes, oak, sweaty notes and fruitiness. Sour flavor, somewhat lemony, with nice funk, fruitiness and a mild honey-ish sweetness in the back. Medium-bodied. Very pleasant.

Cloudy golden color with small head, short retention. I expected a breadish aroma, instead there is some lactic, and light acetone; sour but not pungent, and without Bretts. The mouthfeel is not too dry, the acidity level is moderate, it has flavor of yeast, light bread, light lemon peel; balanced final, quite fresh.
Clearly an homebrew attempt at brewing Lambic; it would be a sour beer, not a Lambic (as the currently assigned style); although the curiosity of drinking a sourdough beer is satisfied.

05/05/2013 Ma che siete a fà (375ml bottle). Ambrata, limpida, schiuma leggerissima, virtualmente assente, con bolle grossolane, che scompare rapidamente. Naso magnifico, sentori di pasta lievita e frutta, un bel carattere vinoso. In bocca è leggermente acida, molto morbida e discreta, forse un po’ leggerina. Corpo esile, carbonazione bassa. Lambic di buona fattura, pulito e dalla ottima beva, ma manca un po’ di carattere.

Pale yellow, no head. Acetic acid and little cereal malt aroma. Light body and light sweet, finish in light sourness, not invadent... beer is light and so drinkable.

Tasted @hotel's room in Roma, bought in the Birra+ Roma. Pours of a lovely, crystal clear amber color w no head. Absolutely flat, no carbonation at all. Aroma is medium, pleasant grassy/yeasty notes mixed with some vinegar tones. Taste is modestly sour, but intensly vinegary - very drinkable, even with no carbonation.
