With its sweet and rich taste, Cyser is a favourite of sherry drinkers and an excellent aperitif or dessert drink. Cyser is a traditional blend of pure vintage apple juice and wildflower honey, combined in a slow fermentation process that dates back to the Viking days.

(3.41 decilitre bottle from Hillside Liquor) Not sure if I’ve had a cyser before. This tastes like a cross between a dry British cider and a Quebecois ice cider. Good in small amounts, I think it would get cloying if I had the whole bottle.

On tap at St. Augustine’s, pours a crystal clear faded yellow with no head. Nose smells more like a cider than a mead, with lots of caramelized apples. Flavour tastes more like a blend, bringing out dry apples upfront, transitioning to honey. Still finishes dry despite the honey. Very nice blend of the cider and mead. Booze isn’t detectable. Good stuff.

Sampled at the Great Canadian Beer Festival. O.K., because I thought Mead was mainly honey-based I was disappointed this tasted so much like apple cider.There was some honey around the edges, but sweet green apple dominates (and mildly repulses me). Boozy and dry enough to act as a acceptable precursor to a two-day stretch of beer-drinking.

Got to love the bottle. Looks like juice for kids. Bright, darker golden pour. Clear and almost still. Aroma is rich of caramel apple with a hint of cider vinegar. Complex nose, even when cold. Drinks like an ice cider, but manages to avoid the boozy/sweet characteristics typical there. There are many forms of apple flavor here from tannins to pith to leaves and sweet flesh. The honey is not flavored as such, but adds a floral note. A bit of carbonation would assist the drinkability here, and the sweetness does limit consumption, but this beverage is one of the more interesting, unique cider-type things I’ve had.

Small plastic bottle. Deep golden colour. Aroma is quite spicy, lightly herbal and apple. Flavour is sweet, cnnamon, honey, apple, with a dry medicinal finish.

Deep blond color, with some lonely bubble. Light apple juice aroma, with light acidity, and no honey. Semi-sweet strong cider, with a lean body, and a kind of sweetness that can be due to the honey more than the apples, but the flavor doesn’t go beyond the apple. Simple.

Very fizzy gold with a white head. Aroma is strong honey and red apples, cinnamon. Taste is very sweet with an apple accent, light spiciness. Simple but very good. Body is silky.

355 ml bottle courtesy Capflu. Slightly hazy bright golden colour with a light but quickly diminishing sparkle. Honey, apple, cinnamon, spice, caramel, and floral aroma with just a touch of alcohol. Spiced honey and apple blend of flavours with an almost “hot” cinnamon finish. Full bodied, smooth, with just enough carbonation to keep it from being syrupy. Not sure how this ranks in the world of cysers, but a pleasant sweet sipper nonetheless.
