Head is initially average sized, frothy, white, mostly diminishing. Body is hazy medium yellow, moderate density of small particles. Aroma is moderately yeasty (dough), moderately hoppy/hops-like (flowers, citrus - orange) lightly malty (light bread), with notes of coriander, honey, pineapple, and bubble gum. Flavor is heavily sweet, moderately acidic, moderately bitter. Finish is lightly sweet, moderately acidic, moderately bitter. Medium body, creamy texture, lively carbonation. Clean, very flavorful, nice mouthfeel, and one of very few ’American Belgians’ that didn’t give away the fact it was brewed in the States (no Cascades in here). This has been in the back of my fridge for over a year, and the alcohol and yeast have managed to keep this quite lovely to this day...but only six bottles left.

decent head with a little lacing. slightly malty aroma and a bit of bubble gum in the flavor.

Not my favorite from Pierre, but still a very good effort. Malty, spicy, slightly lactic. Pretty close to the real thing.

How sad this brewery is gone. This was a strong beer and one of the first Belgian style ales I had tried. It took me awhile to get used to it: strong, sweetish, strange yeast notes (spice, bubble gum), and citrus. Still - integration was masterful.

It is about time that an American brewer took on this style. Great lace work going on. Fruity, spicy, citrusy, and did I mention...delicious!I know Pierre is Belgian but at least it is made in America. Other than John Harvard’s brewhouse, I don’t know any one else who has attempted this style. Great work! Please come back Celis!
