COMMERCIAL DESCRIPTION
This version of Monk’s Mistress - aged in American Oak Barrels - takes seduction to the next level. Its dark, daunting flavors become softer, rounder and more fascinating as they meld with toasted oak and its prior tenant. This temptation is beyond irresistible.

Bottle, generously sent by SHIG – thanks! Pours a dark, murky brown with no head, just a few bubbles. Turns out to be virtually no carbonation here, but it in the end it works out. The nose is almost entirely bourbon barrel; sweet and inticing. Swirling hints of dark fruit and esters. A little vinous. It really breathes nice. The dubbel comes out more in the flavor; chocolate, dark fruits, and yeast. Solid bourbon oak barrel taste. Finishes very smooth and decadent. I’m really enjoying the candied fruit, chocolate, and bourbon finish. Impressive. The amount of influence from the bourbon barrel is great, but the overall development is delicate and quaffable. A+

The appearance is a muddy looking brown colored body with a good two finger white foamy head that dies about 30 seconds and leaves some thick lacing. The smell has some strong bourbon notes, but not overly done, as some light chocolate enters in and combines with some nice Belgian spices, even some vanilla comes in as it warms. The taste is sweet through the bourbon, chocolate and vanilla tones, the Belgian spices help to give it a slight kick but isn’t overly done just combines just right; mainly just some Bourbon along with the Belgian spices in the aftertaste, sweet sticky dry finish. The palate sits about a medium on the body that seems to be more of a sipper. Carbonation seems to be fairly good for the style as it turns out slightly smooth. Overall, this is a pretty good Belgian Strong Dark ale that I would have again.

I won't even say how I got this. All I will say is this beer sat in 100 degree heat for two weeks in my mailbox while I was on vacay. Didn't want to murder the rating.

Pour out of 22 oz bottle, thick black pour with thin off white head, aroma is big booze, oak, slight bourbon, vanilla, hints of slight red fruits, some spice in there as well, touch of molasses, caramel, burnt sugars. Taste is a mix of big bourbon, oak, slight vanilla, hints of earth, grain, lots of molasses, hints of dark fruits, finishing fairly bitter, dry, and sweet. The booze is distracting, but the bourbon notes are tasty.

Bottle, 07/25/2012. Pours deep brown, coarse-bubbled beige head, curtain lacing. Aroma opens with nice notes of vanilla and oak, brown sugar with dark fruits- berries, some cherry. Taste is brown malts, nutty, oak and chocolate, pleasant raisin vinous character coating the tongue. Medium palate, silky smooth. Really enjoyed this one, wish there was more.

Bomber at City Beer. Dark brown in color with a lasting light beige head. Nice aroma of dark fruits and anise with roast and some slight Belgian notes. Very good complex flavor. Berries, prune, and overripe fruits, roasted malt, and oak. Medium-full body with smooth mouthfeel and medium-low carbonation. Very good stuff, more mellow than the regular version for sure.
