Like your beer bitter? Getting tired of inventing zesty kitchen tricks trying to spike your beer in search for that fulfilling kick in the palate? Look no further as 1000 IBU was brewed to satisfy all hop-heads with a craving for some serious back-burning action.

I enjoyed this yet it wasn’t featuring many complexities.The aroma was lacking. It has a nice taste up front and of course finishes insanely dry. Pours thick and deep orange gold. Tons of sediment. A good brew...but kinda gimmicky to me. I get that it takes talent to brew something with this many IBUs yet this doesnt rival IIPA like dreadnaught or Pliny. I still like it overall.

37.5 cL bottle courtesy of Chris, tasted with the barrel-aged version side-by-side with Chris and Dan. Served in a goblet. Pours hazy orange-amber with a small tan head. The head fades to a thin remnant and leaves a small amount of fine lace. The nose is sharp and hoppy, with huge notes of flowers and grapefruit, along with pine, light biscuit malt and pale malts. The flavour is sharp, intensely bitter and hoppy throughout with lots of acidity. There is a small amount of malts up front but they are immediately overpowered, never to return. The finish goes on forever with a complex bitter quality. On the palate, it is full in body with a creamy texture and soft carbonation. Overall, this is an interesting beer with so much hops that it deserves a category of its own. It hits you over the head with sharp, high-alpha hops. As extreme as it is, I actually enjoyed it and would definitely try it again. 2011-04-16

Pour hazy amber off white head good lace. Aroma big pine/floral hops, some citrus, not to much else. Taste palate destroying hops, this was one of the few that wasn’t balanced and wasn’t overly enjoyable. MF cloying full body quite boozy with a destructive bitterness. Overall cool but didn’t enjoy.

Hazy amber/copper color; Medium creamy body; Aroma of pine hops, citrus, floral, & caramel malt; Flavor of sweet malt, caramel, rich pine hops, resin, and citrus (notably grapefruit); Finish is bitter and does linger awhile; Nicely balanced considering all the hops; Overall, one dimensional (as expected) - but very good.

bottle thanks to bu11zeye. poured cloudy amber with a beige head. aroma was caramel and pine. flavor was much the same plus the heat of the alcohol. body was full with medium carbonation.

Dark orange body, thick tan head, floaters. Aroma of herbal liquer, alcohol, some berries. Flavour adds belgian yeast. Even some hop profile. Bitter. No shit? But lame for 1000 IBUs due to thick body.

Silphium (3160) - East Lansing, Michigan, USA - APR 3, 2011
On tap at Crunchy’s, East Lansing. Fiery medium to dark orange-brown body, thick, puffy yellow-beige head. Hoppy, rindy, citrusy nose, somewhat catty, balanced by sweet toasty notes. Strongly bitter, rindy body, medicinal, with berries, brown sugar, toast, and tropical fruit. Has a high octane vinous sugar/alcohol kick. Unique and delicious, unified to the degree that the term "balance" seems inappropriate.

It’s hazy/unclear with a creamy head, and the aroma has notes of fruit, citrus, malt, caramel, tannic acis, grapefruit and spruce. The flavour is sweet and has a good bitterness on a nice caramel base, and it has notes of citrus, mostly grapefruit, spruce, berries, grass and a bitterness, that becomes more and more astringent.

First and foremost. I don’t think I have ever had a beer more bitter than this. It was truely shocking when I took the fist sip and it hit. Had at belgian on tap. Pour is amber red with nice lasting lacing. Aroma is full of bitter sweet hops. Same in flavor.

Aroma of oak barrels, light smoky, sweet malts, caramel and candies. Also intensive notes of hops and fruitiness. Flavor is full bodied, sweet, notes of roasted malt, smoke, barrels and an intensive hop note. Also an intensive bitterness in the end, notes of hop and burnt malt, light sharp and sweet.
