Bottle saved in the cellar since releasing date so the brett has burned off a bit. Nice pour with a milky pale hazy yellow with an incheckningsskranken high frothy head. The nose is fruity with strong notes of bret and some lacticness. Some hints of pepper, yeast and grapes. Really Nice aroma. The taste is much Better now compared to when it was released. The yeast flavours are much more balanced and not A’s agressive. There are some fruityness and a milky attitude. The finish is rather pale with some yeasts and sulphur. Mouthfeel is medium to the light side.

Bottle from Liva. Small head with very short duration. Color is hazy pale yellow. Aroma and taste are nice tart apples and has a nice dry finish.

75 cL bottle. Pours hazy to murky yellow with a huge fizzy white head leaving a small white film on the top. Distinct barnyard and citrusy apple aroma, light yeasty note too. Rather dry and citric flavoured, light yeasty and dry brettish. Immediate finish is dry and citric. Far finish has a distinct flavour of thai/chinese rice chips. Too much going on with champagne and brett yeast at once imho, but certainly a unique cider.

Bottle.Pours pale cloudy white head yellow with a big. Aroma of lemon, bakers yeast, sourish funk brett and some apples. Flavor is strangely oxidized apples with some sour notes and yeast.Medium to thin body, average carbonatio. Nice aroma , doesn’t follow through.

75 cl corked bottle @ home. Pours murky pale yellow (I guess that’s what you’d call it) with some sediment and a white head that quickly fades leaving no lacing. Aroma is sour apples and brett. Flavour is sour apples, brett, and a little citrus – with a dry and tart finish.

Bottled. A hazy dark yellow cider with a huge very fast disappearing white head. The aroma has notes of apples, yeast, and barnyard. The flavor is sweet and acidic with notes of unripe apples, yeast, and barnyard, leading to a dry and tart finish. Not your traditional cider, bun an interesting experiment.

UPDATED: APR 30, 2010 Bottle @ Vinens Verden, Odense. Pours cloudy golden with a small white head. Nose is brett with a layer of apples beneath. Strong yeasty flavor with brett and barnyard. Quite heavy . .

It’s unclear golden with a white head and the aroma has notes of baking-yeast and apple. The flavour has notes of sour apples and baking-yeast, and in spite of the baking-yeast that is a bit unfortunate in this picture, it’s quite refreshing.

Tasting at Papsø
Cloudy pale blond color. The aroma is incredibly smelly and cheesy (if you want to know, many semi-soft cheeses from pre-Alps, feet too); this covers some citrusy sourness, and light plastic. The flavor is dry; as everybody knows that the nose has a connection to the throat, it’s impossible not to feel the cheesy presence even in the flavor. The finish is a bit cheesy (guess that), astringent and woody, but short as well. Nothing close to a good Cider.
