UPDATED: JAN 22, 2014 My Bottom Line:
Molasses, vanilla, chocolate and caramel are enlightened by precise wood and alcohol warmth for a wealthy dessert sealed by roasted bitterness and a hugely chocolatey aftertaste.

Further Personal Perceptions:
-A thin ring of foam surrounds the impenetrable darkness.
-The aroma is a beautiful combination of specialty malts, residual sugars and wooden barrel.
-The Cognac presence is well integrated into the rest of the beer.
-Carbonation is low, increasing the viscosity of the mouthfeel.
-Mouthfeel is Gargantuan, but the sweetness is ably licked by a smidgen of alcohol in the finish so it doesn’t feel TOO cloying. But don’t get me wrong, this is a viscous monster of a brew.
-When in the mood for dessert, this one really fits the bill.

Bottle.

Nip bottle from Bieropholie...wish I had an entire case! Midnight brown with a ruby tinge, oily and viscous, nice dark mocha head that disappears to a memory - be careful not to pour too quickly as their be chunks. Huge roasted malt profile balanced out with the sweetness and alcohol of the cognac, lots of chocolate, some char, raisins and balsamic reduction. Both very bitter and then sweet from the barrel treatment, alcohol, beyond full body into the chewy realm, mild carbonation, becomes quite dry and more bitter with a bigger booze punch on the finish. A sipper for sure but a very good one, interested to see how this develops with a bit of time to possibly balance out a bit.

The tan head covers a viscous pitch black body. Powerful scents of cigar, raisins, fudge, resin - rather complex and pretty cohesive. The Cognac brings about a liquorous feel, both in terms of a certain slickness to the texture and in terms of a grapey alcoholic exuberance. Quite chewy mouthfeel for a barrel-aged ale, its sparse carbonation accentuates that round impression furthermore. Cakey mouth entrance, but veering rapidly toward alcohol and a certain harshness when the resinous hops meet the charry roasted malts, bringing about a clash between bitterness and acidity that is only balanced by the sheer dextrinous dimensions. Dense and powerful imperial stout, seemingly developed precisely to be a hit on websites like the one you’re on.

Deep black pour coating the glass with soy sauce-colored residue. Chocolate-soy reduction aroma, burnt sugars, dates, deep vinous notes, rotting grapes. Ashy chocolate flavor with coffee grounds, tart prune at the heart of it, with overripe grape and tobacco accents. Oily body coats the palate and lingers. Low carbonation.

Bottle from IPB.
Appearance : Deep syrupy black with no head and no lacing.
Aroma : Rich chocolate with dried red fruits and raisins. Some alcohol. Roasted malt, tar and ashed Light smoke. Some resinous hops.
Taste : Rich raisins with roasted malts. Finish ashes, tar, smoke, raisins and alcohol. Lots of coffee. Bitter cold coffee on finish with light astringency.
Palate : Fuller then full bodied. Syrupy and sticky with almost no carbonation.
Overall : Pretty nice sipper. Packed with flavour. Nice mouthfeel. Maybe a tad too alcoholic. Pretty astringent on the finish as it warms up. Great sipper nonetheless.

Black with pretty much no head, there is a tiny bit of deep choclatey brown froth. Aroma of smoke, roast malt, chocolate, dark fruit, coffee and strong cognac. Taste is light sweet, really well balanced, medium duration. Really full bodied, very thick oily texture, minimal carbonation. Really good beer.

Bottle at Stone bistro. This better be good for $22 of 250 mls of booze. Pours pitch black with no head, looks thick and syrupy. Aroma of licorice, fudge chocolate, booze, some fruits, woodiness. Chewy mouthfeel with low carbonation. Massive roast flavor, lingering fudge on the palate. Some very nice sweet booze but doesn't overpower. This is a beautiful fudgy yum.
