This spontaneous fermented beer has been aged in Hungarian oak barrels and appears with a light amber color with almost no head.

The aroma is huge and very vinous. A clear impression of oxidized apples is the first thing that hits you, which made us think of heavy old fashioned British apple ciders. The aroma also reveals the wooden notes from the barrels along with some burned toffee and spices like Star anise.

It has a very heavy acidic profile at first, one that quickly slides into a smooth kind of sweetness. We taste green apples, carambola and very young green grapes. It has a certain lactic acidic touch and a creamy dry finish that lasts forever and bares the green impressions through.

Some mild creamy blue cheese on roasted rye bread would work great due to both the lactic and acidity impressions in this beer.

Bottle, 06/09/2014. Pours burnished copper, small white head fades to an almost still surface. Aroma is earthy barnyard, mildly tart, overripe apricot, peach, citrus overtones, nicely funky, hay, touch of caramel. Taste is nicely tart, mildly sweet apple, citrus, mild acidity and funk in the middle, wet wood finish, finishes clean. Light body. Well done geuze, enjoyable.

Bottle from Kihoskh, consumed in room 1014 at Radisson Royal Hotel during CBC 2015. A bit orange/amber with a small head. Aroma of apples, wood, citrus and some light white bread. Similar taste. Also some yeast and white wine. Medium tart and with a dry finish. A nice one.

My first lambic. Very interesting and luxury drink. Taste is something between wine and cider. Not much sparkling.

Refrigerated 37.5 cl green bottle corked and caged poured into a tulip. Caramel colored with very small white head. Aroma is tart, medium body, very little carbonation, and no lacing. Taste is tart, funk, and wood. Hoped for more.

Flaska Bishops örebro. Årgång 2014. Djup orange kulör. Frisk och parfymig doft med äpple ananas, citrus, färskt gräs och stall. Syrlig och fint torr smak med knäckig fatkaraktär och äpplekart

Pours a clear copper blond beer with a smell, fine white head. Smells funky, green apples, fresh mowed grass, some wood. Tastes gently sour. Leaves a smooth sour palate. Mouth feel is big and lingering. Great sour for people who are new to sours. This one is really balanced and gentle. Great beer for food pairing also.

hazy orange caramel, large bubbled white gravity head dies fast, thin ring leftover. Highly citric with oaky caramel notes, plenty of wood and green apple. Apple thinness front palate, cereal grain and honey sweetness, but watery mid accented by dry finish and minimal carbonation, brett heavy.

Shared bottle. Light amber, almost golden, with almost no head. Vinous, apple, almost cidery aroma, wooden, basement aromas, but very pleasant. Taste is sour, very sour, light sweet. Dry, notably BA wooden dryness, vinous, flat carbonation. Awesome! Head this one paired with cheese, great combination.

Pour is darker golden orange with a small amount of larger bubbled white head. Nose has a faint dusty leathery brett, a bit of acetic acid and notes of plastic, a touch of lime, heavily citric acid and notes of tangerine. Flavor is muddled, lightly acetic, heavily bretted which really dulls out the flavor, seltzer and leather mixed with some citric notes in back. light body, extremely assertive carbonation, slightly grainy feel.
