This spontaneous fermented beer has been aged in Hungarian oak barrels and appears with a light amber color with almost no head.

The aroma is huge and very vinous. A clear impression of oxidized apples is the first thing that hits you, which made us think of heavy old fashioned British apple ciders. The aroma also reveals the wooden notes from the barrels along with some burned toffee and spices like Star anise.

It has a very heavy acidic profile at first, one that quickly slides into a smooth kind of sweetness. We taste green apples, carambola and very young green grapes. It has a certain lactic acidic touch and a creamy dry finish that lasts forever and bares the green impressions through.

Some mild creamy blue cheese on roasted rye bread would work great due to both the lactic and acidity impressions in this beer.

Bottle @ Ølbutiken copenhagen. Light copper coloured. High carbonation. Very citrus with a bit of old leaves. Sourness is quite overwhelming, but shows potential. With some aging it might become more balanced.

Bottle. Pours a hazy earthy orange with a thin tan head that dissipates completely. Aroma has a sour/tart fruit note with a bit of acid and a light oaky funk backbone. Flavor is a bit more reserved with mellow tart fruits, light acid and a smooth funky oak note.

Good clarity to the two glasses poured, with just a pinch of sediment getting in to the bottom of one. Rusty copper-tinged golden, with ample carbonation creating a fleeting white head.
Lovely cheese and wet earth smell in the nose gives way to apples, cardboard, sweat and light cream-of-wheat character. Very good funk to it, with some light buttertoffee-like notes picking up on the end. Oak in noted, but is not dominant. Very light on the lactic acid with lots more fruity/lively brett notes. No alcohol.
A touch more sweet than expected, in flavor, but with a fun brett lemon-lime character and a decided green apple and grapey flavor that they correctly point out in the description. Lots of cheese and must, some dry oak tannin and vanilla and a very soft, creamy-sweet texture for a "lambic". There are fleeting hints of metal, perhaps not full on rust or anything sharp/highly overt, but maybe more correct to call it a strong heavy mineral-like presence. Rather strong oxidation seems a bit out of place given this young a bottling date, but I’m just thankful it dosent have any dirtiness that you often get from De Proef. Furthermore, the green apples/green grapes, while they admit to them being there, are not exactly high on my list of flavors/aromas I want to find in a good lambic. Still, I like that the texture is good, the alcohol low and the brett and oak notes pretty lively and enjoyable.

Light golden color, small white head. Acidic, unripe berries scent and taste. Can drink it fine, but I didnät feel it was super complex to pick out various aromes and taste. Medium to medium thin mouthfeel, very low bitterness. Fresh.

Pours clear pale orange color with a large white head. Very tangy apricot and rowan berry aroma, mild grapefruit notes and orange zest, some spicy tones also. Woody, tangy and very crisp sour palate, sour orange, apricot and gooseberries on the flavor, some white wine notes, some sweet toffee and honey notes on the finish. A bit different but still in ways true to the style interpretation of the style. Good.

[Backlog] Sampled from bottle at THE FESTIVAL in LA with Linh and Scarlett. Pours a deep golden body with thick off white head and lots of lacing. Nose is full of earthy barrel funk, stone fruits and light spice. Medium bodied with notes of dusty basement, bitter fruits, oak, earthy yeast and light spice. Nice balanced acidity. Light wood.
