Commercial Description:
Brewed by Mikkeller at De Proefbrouwerij in Lochristi, Belgium. Known as Monk’s Brew in the U.S.
Ingredients : Water, malts (pils and pale), candy syrup, brown sugar, hops (northern brewer, hallertauer and styrian goldings) and ale yeast
Monk’s Elixir is a heavy dark Belgian ale inspired by the Trappist monasteries of Rochefort and Westvleteren. The beer style, characterized by its high content of alcohol, distinguishes itself by its dominant yeast character, delicious malt background and balanced hop notes.

The aroma has alcohol, malt, caramel, fruit, and hops. The appearance is red/brown with a nice head and some haze and particles. The flavor is like the aroma with an acidic and paper finish. The palate is thin. Overall it’s drinkable but nothing special.

Brown liquid with some small "swinkles and fish food". Modest khaki head that settles gradually to a fine lid. Slow gusher. Aroma has a mix of Dark grain, earthy honey and spice, over-ripe dark berries, and hint of alcohol. Easily from the first sip I could tell this was a quad and a decent one. Dark chocolate, and berries are dripping of the lightly toasty malt. A burst of alcohol in the finish. and a touch of warmth in the linger. A luscious feel. Some granary dust and dust in the middle. Finish is slightly acidic with a slight vinous quality. Linger has some lightly roasted grains and hint of cocoa. Glad I picked this one to start my lenten journey without beer.

Bottle. Dark brown with small tan head. Nice malty aroma is very dubbely. Spicy with cinnamon, nice molasses, demerara dark sugars. Also spicy chocolate like Mayan chocolate with cinnamon and chili. Soft mouthfeel with low carbonation is slick, slightly oily. Carob, medium-dark chocolate, like a 65%, coffee, and more spices that evoke Westy, and impressive on that level. The predominant impression is earthy-spicy-sweet. Very nice.

Bottle into chalice. Pours a murky brown, dark, with a fluffy off-white head that settles quickly into a thin creamy cap. Nose is dark fruit and brown sugar, with some yeast coming through as well. Taste is light. Some doughy brown sugar up front, lots and lots of dark fruit/raisins. Hint of cocoa. Very light, earthy bitterness towards the finish. Almost no alcohol in taste, but a bit spicy and warming on the finish. Lacks depth and complexity for the size of the beer. On the flip side, still quite flavorful, and very drinkable for a 10% beer. Carbonation is light, delicate, a bit fluffy, medium bodied.

Bottle. Pours a dark brown with a fluffy tan head that leaves good lacing. Rich malty aroma with light caramel, brown sugar, alcohol and notes of dark fruit. Flavor is smooth and moderately sweet with brown sugar, caramel, raisins, figs, molasses and dark fruit. Medium to full bodied with a dry bittersweet finish. Excellent quad

[bottle]Pours a hazy dark brown with a mild tan head that has some staying power. The aroma is not too strong and reminds me of light fruitiness and caramel flavors. Well balanced, not too sweet, not too dry - very nicely done - a solid but not exciting beer.
