Brewed by Mikkeller at De Proefbrouwerij in Lochristi, Belgium. Known as Monk’s Brew in the U.S.
Ingredients : Water, malts (pils and pale), candy syrup, brown sugar, hops (northern brewer, hallertauer and styrian goldings) and ale yeast
Monk’s Elixir is a heavy dark Belgian ale inspired by the Trappist monasteries of Rochefort and Westvleteren. The beer style, characterized by its high content of alcohol, distinguishes itself by its dominant yeast character, delicious malt background and balanced hop notes.

Courtesy JMFG. Pours a clear but very dark chestnut brown color with deep violet hues. A frothy, creamy, light beige head leaves soapy swaths of lacing to rejoin the body. The aroma shows notes of cinnamon raison bread with brown sugar, ripe red grapes, figs, dates, and a hint of spicy clove. Earthen hops complete the nose. Flavors include a hefty dose of dark caramel and earthy, dark fruits with cream. The finish is a little hot from the alcohol, ending moderately dry and peppery. Medium-full and creamy on the palate, the light carbonation is nice, but the alcoholic heat gets to be a little too much. Overall, this is a fairly well done quad. Nice brew.

Interesting beer. Pours a dark cloudy brown with a thin tan head. Nose of yeast, brown sugar, and some caramel malt. Fairly sweet, interesting Quad.

Bottle. Dark toffee/caramel color with a nice tan head. Banana and rish malt aroma. Rich caramel/toffee malt flavor with plum/fig, banana, earth, and yeast. Medium body. Toffee/caramel lingers with yeast and light fruitiness.

Bottle thanks my girlfriend. "Monks Brew". A little disappointed. Pours with a large, thick, off-white head with a hazy , deep brown body, with good lacing and retention. Aroma is alcoholic and meaty with a spicy, note, dark fruits, flowery, and a bit of litter box. Taste is watery for the style, alcohol, with a fruityness, alcohol is forward. Very thin bodied with light carbonation. Not a great quad.

Dark brown, light tan creamy head. Dried dark fruit aromas ride soft hints of toasted brown sugar and bread. Caramel coated raisin and toasted sugar plum flavors round to lightly bitter finish. Medium to full bodied with soft carbonation. Decent, but not a favorite from these guys…

Was a little worried about this one since I acedentially froze the bottle and there was some leakage. Idiot me! But it thawed slowly in the fridge. Anyway, thin head of varying sized bubbles. Rich malty aroma with some raisins and brown sugar. Pretty sweet smelling. Color is a pretty dark mahagony brown. Sweet and malty with some more raisins and prunes, some molasses and roasted malts. Finishes slick and sweet. Hides its alcohol pretty darn well. A decent brew but lacks the depth of a true quad. A decent brew but lacking for a quad.

Pours dark brown, with a smallish off white head. Big dark fruit aroma, grapes and plums especially, with some candy sugar and sweet malt aromas. The flavor is pretty solid, although fairly standard for a quad. Not overly interesting or complex, but a nice sweet, malty, fruity, quad with proficiently masked alcohol burn. In fact thats probably its best trait, its alcohol masking abailities. Solid.

750ml bottle, as Monk’s Brew. Cellar aged for about 8 months. Nose is comprised of dark, sweet malts and dried fruits, full and estery with notes of raisin, date, black cherry, dark brown sugar, cookie, milk chocolate and faint licorice. Deep, dark mahogany color, mostly clear, with a very fine head. Flavor is similarly sweet and fruity, some cocoa and dark bread up front, turning fruitier and showing hints of alcohol before the very lightly bitter, warming finish. Lingering suggestions of watermelon and peppery spice. Mouthfeel is smooth, somewhat thin, coating and low in effervescence, body is quite full. Very quaffable for the strength, and a good attempt at a Trappist style overall, even if it lacks the mind-numbing complexity of the world-renowned brews that inspired it.
