Danish: Brygget af basismalt og under mæskníngen og gæringen tilsat enzymer for at opnå en så høj forgærbarhed som overhovedet muligt. Til både bitter-, smags- og aromahumle er brugt den New Zealandske humlesort ‘Nelson Sauvin’ som er opkaldt efter sine druekarakterer, der bringer minder til den New Zealandske hvidvinsdrue Sauvignon Blanc. Af gær er benyttet både champagnegær og brettanomyces og pga. enzymerne er øllen gæret meget langt ned og dermed er slutresultatet en meget tør øl. Efter endt gæring har øllen ligget 5 måneder på hvidvinsfade fra Østrigske Weingut Kollwentz og opnået yderligere karakter. Til slut er den flasket på 750 ml champagneflasker med et ekstra højt CO2 indhold.

English: Nelson Sauvignon is a New Year beer it is fermented with ale yeast, brettanomyces and enzymes. Then it has been aged three months in Austrian white wine casks. Very dry, very vinous and very delicious.

Pours amber with a white head. Aroma is malt, brett, fruity and citrus hop. Flavour is malt, brett, fruity, grapefruit and citrus hop. Very complex and perfectly balanced.

Bottle. Pours cloudy golden with white head. Aroma of vanilla, funk, sour berries, malt, peach and fruitiness.Flavor is sweet and funky with some malt, and vanilla and oak.Medium to thin body, average carbonation.nice funky beer.

Hazy amber color with a large, white head that left nice lacing on the glass. Aroma of vanilla, nelson, brett, wood, white wine, floral hops, and citrus. Taste of vanilla, citrus, brett, white wine, wood, and a lightly bitter nelson finish with light alcohol.

Draught @ Mikkeller Bar, during 3Floyds Night 2011. Hazy amber with huge white / off white head. Lovely fruity aroma of citric and exotic fruits with a great vinous touch. Tropical fruit taste, brett, dry white wine, dry finish. Lovely.

Pours light ruby amber thick with a big light tan head. The aroma is phenomenal, huge notes of Nelson hops with the funk blended so well together, almost like candy. The flavor starts with juicy wine notes from the barrel, Nelson hop notes, and then a bit of a dry, but pleasant ending with some funk to help enhance a bit.

Pink grapefruit and lilly bouquet, strong and wonderful. Cloudy copper, thick yellow head. Tangy grapefruit flavor, nothing else, but intense and delicious. I could drink this all the time.

Pours hazy amber into a snifter. Off-white head with excellent retention recedes to skim surface. Sweet sour summer fruit and brett aromas. Dry with sweet funky tropical and summer fruit upfront turning to grapefruit in the lasting sour funk finish.

Bottle shared by bhensonb. Pours reddish copper with a foamy beige head and a winey aroma. There is a sourish caramel malt flavor that leaves wine on the palate. A very elegant and tasty brew.

750 from The Davis Beer Shoppe in Davis, CA as the Brut. Purs hazy copper with a creamy foamy beige head. Aroma of light stone fruits, barnyard and floral hop. Flavor is pretty much the same. A taste is worth a thousand words. Brilliant ale.

Pours murky bronze / tawny brown with a huge light brown head that leaves quickly. the aroma has lots of fruity/grapy Nelson Sauvignon hop characteristics, fruity Belgian yeast, sweet malt and berries - very fruity overall. Medium / full body with lots of gentle semi-sharp carbonation. The flavor starts very fruity like the aroma along with more of a hop presence (yep, fruity as well) and lots of peach and nectarine flavors. The finish adds some peppery spice. As it warms the flavor seems to get fuller, heartier and spicier. Very nice beer.
