Danish: Brygget af basismalt og under mæskníngen og gæringen tilsat enzymer for at opnå en så høj forgærbarhed som overhovedet muligt. Til både bitter-, smags- og aromahumle er brugt den New Zealandske humlesort ‘Nelson Sauvin’ som er opkaldt efter sine druekarakterer, der bringer minder til den New Zealandske hvidvinsdrue Sauvignon Blanc. Af gær er benyttet både champagnegær og brettanomyces og pga. enzymerne er øllen gæret meget langt ned og dermed er slutresultatet en meget tør øl. Efter endt gæring har øllen ligget 5 måneder på hvidvinsfade fra Østrigske Weingut Kollwentz og opnået yderligere karakter. Til slut er den flasket på 750 ml champagneflasker med et ekstra højt CO2 indhold.

English: Nelson Sauvignon is a New Year beer it is fermented with ale yeast, brettanomyces and enzymes. Then it has been aged three months in Austrian white wine casks. Very dry, very vinous and very delicious.

Bottled. A hazy amber beer with a thin beige head. The aroma has notes of wood, bettanomyces, malt, caramel, grapes, and barnyard. The flavor is sweet with funky notes of brettanomyces, malt, wood, grapes, caramel, alcohol, and barnyard, leading to a dry finish.

One of the more finer beers that I have ever sampled. Good vinegary aroma, some barn, dust and big apple profile. Coppar with a small head, almost like Orval looking. Taste is all brett, vinegar, oak, hops. Fantastic palate. Long finish. Awesome brew!

UPDATED: MAR 7, 2015 750 bottle in a snifter. Pours golden with a lacy head. Aroma of the wine, some floral and lightly citrus hops, and caramel malts. Flavor the same. Average texture. A good beer for the style. Bottle purchased at HF in 2015. Tastes better than I remember.

Sample at Jungle Jim’s Barrel Aged Tasting, from a bottle. Clear golden orange color. Little white head. Decent lace. Nice citrusy brett nose. Good soft carbonation. Medium body. More dry texture, light belgian funk. Citrus hops. Good zesty, sweet taste. Hint of baked apple. Very tasty.

A - Hazy orange-copper with a finger of frothy off-white head. Fades normal. S - Grapefruit, tropical, pine, and lightly spicy hops, sweet caramel and bready malts, oak, white wine, vanilla, a bit of sourness, and a bit of booze. T - Grapefruit, tropical, citrus, pine, and spicy hops, bitterness, sweet caramel and bready malts, oak, white wine, some sourness and a bit of funk, champagne yeast, a bit of vanilla, and a bit of booze. M - Medium-full bodied with moderate carbonation. Smooth with a dry, bitter, tart, and warming finish. D - Excellent balance. The hops and the barrel character blend very well.

Bottle @ home...It pours hazy orange with a large fluffy creamy off white head...... The aroma is fruits, sour, bitter, citrus, caramel, white grapes and brett..... The flavor is so nice it is almost perfect! imo... :) very vinous, fruity, berries, brett, peach, light spices, caramel and sour....with a finish that is very nice! dry and light acidic.....Hope to have this fantastic brew again!
