Mikkeller and To Øl present to you - our effort to make the lightest beer in the world.
What is the lightest beer in the world???
What we mean, is that Walk On Water is the beer with the lowest density. It simply weighs the least. Brewers and beergeeks alike tend to describe beer by its density (or gravity). The specific density of a liquid is determined by its amount of dissolved matter. Normally proteins, carbohydrates, lipids and ashes are the four factors governing the density of a liquid. But for a beer it is more appropriate to describe its density by two factors; carbohydrates(sugar) and alcohol. Alcohol is much lighter than water, while carbohydrates (or sugars) in solution will raise the density of water. When we brewed this beer the challenge was to ferment as much of the sugars from the malts as possible, without leaving any residual sugars. This is fairly easy for low ABV beer types, but is much more challenging for a 14% ABV beer - you could say the higher alcohol percentage the lighter, but then again high alcohol would lead to high amount of rest sugar and therefore the beer would be heavier.
After working on the breakdown of residual sweetness (dextrines etc.) and optimising our fermentation, we ended up with this beast of a boozy beer!
14% alcohol and no residual sugar making it a 100% attenuation fermented beer makes this the dryest and lightest beer in the world.

Bottle at Ulrik’s. Pours a clear golden with a white head and lacings. Sweet and quite bitter. Fruity hops aromas. Lots of alcohol aromas. Medium to light bodied. Medium carbonation. Long very bitter finish. Too much alcohol... kinda burns in the finish.

Draught at Cask, Clerkenwell on 29 Dec 2012. Poured a hazy amber, with a thin off-white head. Aroma of toffee, spruce and gluey esters. Full flavours; tinned fruit, malt and some citrus hop character. Finish was not too boozy, considering, some grain and grassy hop resin.

Walk on Water pours a hazy bronze orange with a bubble beige head that lingers a fair while and is easily agitated. The aroma is alcohol, fresh biscuits, citrus and pine. The flavor is citrus up front with biscuits immediately after and then alcohol rides out in the aftertaste. Overall this is a decent beer. For the price it’s more of a novelty for the craft of the beer than the outcome.

Ummm..couldn’t finish this beer. Wasn’t actually bad, just too much. I think it’s kind of arrogant to classify this as an "American Strong Ale" when it’s made in Denmark. That aside, this beer is a chore. Aroma was like a wheat wine. Strong caramel and cereal. Pour was a beautiful cloudy thick light gold with lots of floating sediment! Taste was just over the top sweet. Sweet caramel, sugar and alcohol burn. Thick mouth feel. Slight toffee came out as it warmed. Drank this before bed and had to dump it. Mild carbonation but better than most of this style.

Bottle in celebration of the birth of one of my best mates daughter, Tabitha. Cloudy, honey gold with a quickly dissipating off white head. Wonderful aromas of honey, peaches, nectarines, apricot, cereal, grain, caramel jersey lollies and a big whack of rummy booze. A sweet beginning of honey and stone fruit, leading into a long, dry, boozy finish. The alcohol perhaps drowns out the flavours. Love the interplay between sweet and dry though.

Bottle from tasting at home. Pours bright orange with white head. Nose of alcohol, citrus, hay, florals and herbal. Finishes very boozy with lots of fresh citrus. Lighter body.

Tap at G-Town Paradiso. Awesome concept. Unfiltered golden orange. A beast. I’d call it a wheat wine, but it doesn’t have that malty rich insanity. Like an APA, if you added grain alcohol. Just a monster of a beer, in shiny smooth clothes. Mead tendencies. Champagne yeast? Boozy all the way, but a cool experience. Well done, but brutal.

Ins Glas ergießt sich ein dunkel bernsteinfarbenes Bier mit schöner Schaumkrone. Geruch sehr röstmalzig, Karamell, überreife Früchte, hopfig. Geschmack röstmalzig, fruchtig hopfig, Karamell, alkoholisch.

Bottle. Pours apple juice yellow with a small white head. Notes of caramel, honey, citrusy hops. Surprisingly light on the mouthfeel for the amount of alcohol in it. When it warms up it gets more Belgian tasting, though with the alcohol presence of something cheap and eastern European. Kind of surprised I liked it.

Bottle. Pours clear golden with a small white head. Aroma biscuit, booze, oak, fruit, citrus, pine and spices. Taste is heavy sweet and moderate bitter. Body is medium, texture is syrupy, carbonation is soft+. Finish is very long, bitter and warming. Goes down real easy until temperature goes up.
