Mikkeller and To l present to you - our effort to make the lightest beer in the world.
What is the lightest beer in the world???
What we mean, is that Walk On Water is the beer with the lowest density. It simply weighs the least. Brewers and beergeeks alike tend to describe beer by its density (or gravity). The specific density of a liquid is determined by its amount of dissolved matter. Normally proteins, carbohydrates, lipids and ashes are the four factors governing the density of a liquid. But for a beer it is more appropriate to describe its density by two factors; carbohydrates(sugar) and alcohol. Alcohol is much lighter than water, while carbohydrates (or sugars) in solution will raise the density of water. When we brewed this beer the challenge was to ferment as much of the sugars from the malts as possible, without leaving any residual sugars. This is fairly easy for low ABV beer types, but is much more challenging for a 14% ABV beer - you could say the higher alcohol percentage the lighter, but then again high alcohol would lead to high amount of rest sugar and therefore the beer would be heavier.
After working on the breakdown of residual sweetness (dextrines etc.) and optimising our fermentation, we ended up with this beast of a boozy beer!
14% alcohol and no residual sugar making it a 100% attenuation fermented beer makes this the dryest and lightest beer in the world.

UPDATED: MAY 17, 2013 Clear but strong, with a citrus nose and taste. More aromas when served at room temperature, but too much if you wait too long. With the perfect timing, it is one of the best beer I?ve ever tasted.

This has an aroma of orange and old paint. Looks orange as well. Flavor is slightly sweet with a hefty amount of alcohol as well as some stickiness. It mostly tastes like a sweet Double IPA. (which I seem to be drinking a lot of lately)

A good non-American strong ale, potency is there but not the full robust body of others.

33cl bottle thanks to Dutchdrebus @ ZZT V. Hazy yellow to orange color, small off-white head that quickly disappears. Aroma is quite fruity, lightly malty, hops, alcohol. Taste malts, alcohol, fruityness of peach, hops, slightly bitter. Full body, full carbo.

ill never run out of good things to say about mikkeller projects. bottle. cloudy murky gold with a stable, small white head. robust tropical aroma of pineapples with wet wheat straw. a refreshing, brisk, highly carbonated palate that leaves a lingering warmth. flavors are of tropical fruits(pineapple), lemons, vanilla, white bread. as always, im impressed with mikkellers experimental, homebrew-like, approach to beer. this is certainly a cool experiment that turned out very well. no, i dont want to drink a six pack of this, not even a bomber, but i can honestly say one small bottle makes the hobby of beer sampling a total joy. turned out good, fun to drink, mission accomplished.

Bottle - 330ml. Beautiful cloudy golden/orange/body with an average, lasting white creamy head. Fresh, sharp hoppy aroma with malty, citrusy, and herbal hints. Alcohol is perfectly hidden. Its sharp, very well balanced, hoppy taste carries malty, orange, yeasty, and herbal notes. Alcohol, although noticeable, is not agressive at all. Ands with a long, warming, sharp bittersweet finish. Very interesting experiment.

Tap at Mikkeller and Friends. Poured a hazy light amber with a frothy white head. The aroma is clean, yeasty and packed with citrus fruit. The flavour is alcoholic bitter, orange fruit, yeasty, some acidity and lots of orange peel on the palate. The ABV is high, but it really does not destroy the beer as often happens. Its smooth, rich and somewhat like a liqueur. A really excellent beer.
