This beer defies standard descriptors, other than that it is highly carbonated and fermented with a blend of Iowa Pale Ale yeast and Brettanomyces. Look for a strong, thick head, extreme cloudiness, and a myriad of odd flavors.

The Saisonnier pours a milky straw color, with some creamy off-white head. The aroma is delicate and elusive, featuring light fruit (raspberries) as well as some funk (wet pavement?). The taste is dry, with a somewhat zoological funkiness. A bit of malt flavor breaks through. Despite being so dry there is a bit of a cloying sensation, as well as a lingering bitterness. The nose is fantastic but the flavor doesn’t quite match up.

Draft at Millstream Beer & Chocolate tasting event. Poured an attractive cloudy yellow color with a white head. Yeasty bread dough and distinct bacon (yes, bacon) greeted the nose. Light to medium bodied and slightly sweet. Carbonation was on the higher end of the spectrum. There was a funky barn-yardy note, but no significant acidity other than a faint tartness at the end. Yeasty bread dough, corn syrup, and pale malt flavors. Would be nice to try this after letting it sit in the keg for six months or a year.
