Lightly hazy golden body is topped by a low white head that recedes rapidly to ring with scant patchy lace. Plenty of tannins and nice cereal malt provide a good base beer. Ginger is notable without showing off or standing out too much. Decent balancing bitterness. Could use stronger carbonation but medium body is quite nice. Sampled on cask at Dix Mardi Gras 2007. A bit undercarbonated, this cask, but here’s what I’ve got: Loads of ginger, light cinnamon, light bready malts and a surprisingly tart signature. The tartness and ginger make for a dry finish. Yeah, this would be better with proper carbonation and less suspended yeast but the balance and the nuances seem to be in the right place.
