Pours a cloudy golden color with massive creamy white head that settles slowly. Aroma is yeast, spice, herbs and grass. Tastes slightly bitter initially with a balancing note of sweetness toward the end. Notes of spice, cloves, yeast, bread, faint citrus throughout. Lovely, clean, yeasty aromatic profile. Flavor is similarly of a clean yeastiness, but borders on antiseptic. It has a thick white head made up of tiny little bubbles, the head settle quickly but hangs around in a thin form for most of the time you consume it. The nose is a dusty mix of spice yeast and hops. The mouth feel is highly carbonated, this comes from the bottle conditioning. The taste is a sweet mix of spice, I get light coriander, cloves, peppercorn and nutmeg with a very forward flavor of acidic lemon. The finish is a dry sweetness that is somewhat lingering. The whispy white foam sparkles beautifully. Yeasty light spice is evident on the nose as well as light spiced ginger, clove and a slightly spiced peppery kick. The taste is similarly spiced and graduates to a drying funked out feeling in the back. There is also a light sweetness character which gives way to a musty mustard-ish funkiness. Smells spicy like a tripel and maybe a bit of alcohol and citrus. Sweet and carbonated/dry on the tongue. The taste is very interesting though, lemon zest with a pepper and clove spiciness and a slightly bitter finish that hides the alcohol. These flavors sort of move in order from the front to the back of your tongue. Sweet/Citrusy to Spicy/Dry to Bitter. In some ways it is like a tripel in others it is like a Witbier. My first Saison, very enjoyable.
