Lots of yeast on the nose, with a somewhat doughy presence as well as some lemony citrus. Some slight spice. Thought it landed somewhere in between a Belgian golden and a saison. Pours with a large, rocky, white head covering a murky tan body with some medium sized particles floating around in it. Some lacing, but nothing special. Aroma is woody, fruity (citrus and bananas) with some spices. Taste is both peppery and fruity, but pretty boring. Very fizzy on the tongue. Distinctly Dupont yeast flavors: unsweetened dry citrus and zests (thinking loquat, pink grapefruit, pomelo etc); amusing astringency. Wacky as a saison should be with dry, slightly watery finish and the same kind of approachable complexity that the regular Dupont saison has. One of those great beers that you can either think about or not as the situation requires. gueuzeisgod (109), Graham, North Carolina, USA Apr 4, 2008 750ml bottle, labeled as Foret Organic Saison- 2006 on cork. Poured aggressively to create a pillowy cream colored head- collapsed by half then remained a while, leaving some nice tenacious lace. This is my favorite of all the DuPont beers- smell is sweet and fruity, banana and bubblegum. The malt sweetness is the most balanced of their beers, good earthy bittering hops, back of the tongue bite from hops and carbonation. Spicy, earthy flavor, finishes mostly dry with only a bit of residual sweetness.
