Pours a light hazy pale yellow with a pretty, staying, frothy white head - good lacing. Aroma is great, flowery, ginger, banana, apples, coriander and a wheaty edge. Mouthfeel is great as well, quite dry and fills more than it looks like. Flavour has subdued sweetness, good crispiness and is elegantly spiced. Nose is a bit spicy with lots of fruity notes. Taste is very nice with some banana, melon, vanilla, and raspberry flavors,upfront, then some spiciness....ginger, pepper, allspice in the middle, and some herbal hops in the semi-dry finish. Very mice and balanced. Body is medium, carbonation is moderately high. Very nice beer and wonderful example of this style! 750 mL Bottle. Enjoyed this one with my Easter 2008 dinner: Roasted duck (marinated with orange puree and rosemary) with caramelized onions, saffron rice with peas, and a balsamic reduction, and rosemary sourdough rolls. Equally amazing with dessert: homemade sweet ricotta tart.
Poured into a Unibroue tulip glass, forming a huge foamy/rocky head. This beer is beautiful: the color of gold, hay at sunrise, and strong chamomile tea, with bubbles a-plenty rising from the bottom of the glass.
On the nose, this ale continues to unfold a plethora of offerings the longer I linger -- burnt sugar, caramel, grass and hay, almonds, cardamom, and (my favorite), boxwoods after a summer rain.
The taste picks up right where the nose leaves off: almonds, spice, white pepper, raw unrefined sugar and caramel, with a tart (almost mild citrus) twist. Superb!!
Nor does the palate disappoint: even thought the beer is slightly sweet on the tongue, the palate is cava-dry and bubbly. Wonderful stuff.
Overall: More, please!!! And, it’s organic, to boot.

Sweet fruity (citrus, green banana), moderately yeasty and wheaty aroma with traces of vanilla and a slightly acidic vinous touch. Moderately sweet flavour with a shy tinge of acidity, medium carbonation. Yeasty, wheat-malty, slightly fruity taste; quite dry, bitter-sweet wheaty and moderately yeasty finish. Well-rounded Saison (12.03.08).
