Citronella and pepper in the pleasant nose with notes of mint. Fairly clear, golden coloured body with dense, small-bubbled, white head that lasts nicely. Earthy bitterness and mild spices with some notes of pine. Bitterness lasts nicely. Soft, smooth mouth, medium body, gentle carbonation. Excellent! American version is well-named for the flavours it presents. Bottle enjoyed with beerbuzzmontreal, MartinT, Rastacouere and a gang of Bierophoux.
Year old bottle tasted at a resampling seemed to have lost a fair bit of character - best enjoyed more or less fresh. Probably would have knocked it down to mid-three’s had I been rating.
Resampled numerous bottles of various ages and it keeps getting better and better - this is in my top ten beers ever, no question!

aroma is a little smoky, with that same belgian yeasty aroma as the other biologique line. follows with flavor that is more enjoyable than some of the others: fuller mouth-feel with dry finish

Bottle picked up in Belgium. Ok, here’s a really comprehensive rating from me. Opened the bottle, a little carbonation evident now, the aroma coming out of the bottle is predominantly smoky, with malt and some Belgian yeasty character. Now I’ve poured this into a chalice. Aroma is smoked, malty, some apple perhaps banana, some alcohol evident. Moving on to the flavour, we have smooth malt, some smoky flavours, various fruits, spice and a buttery character. This is a very, very nice beer from Belgium!!!

2003 bottle consumed September 2004. Pours a lazy gold, hazy and obviously bottle conditioned. White foamy head. Hint of orange tinges throughout. Aroma of spicy coriander, bitter/sour apples, lots of sweet wheat malt and some more peppery hops notes. Flavor begins moderatley sweet, with plenty of wheat to back up the large pepperiness. This reminded me much of Vieille Provision, yet this one, as I got towards the end, seemed a bit too sweet and just too overpoweringly wheaty. Granted I like my beers more dry, but the provision seemed to have many more nuances. This one seemed more of a frontal attack of pepper, lemony dough and heavily sweet malt. Perhaps, for once, I should have drank this cold. Anyways, it was definitely well-made, just not quite what I was lookin for. 7/4/7/3/14

On draught at the Moan and Dove, Feb 25, 2005. I’m not getting nearly as much, if any, of the doughy/overly sweet malt. Much more delicate, with some fresh herbal, lemon zest and spicy yeast notes. Refreshing body with light carbonation. Unlike the Vieille Provision, it was not terribly assertive with its flavors, but I dont think it is trying to be. 7/4/8/4/15

2004 bottle Consumed on 11/6/2005. Nearly identical to the 2003 bottle, and I had it with about the same amount of age on it. Just too sweet, ultimately, for my liking. Lots of lemon infused sugary white dough. 7/4/7/3/14

Bottle. Yeasty doughy nose. Pretty caramel orange capped with a thin layer of bubbles. Notes of suntan lotion, tobacco, apple, orange, and wheat. Very full creamy mouthfeel. Finishes bitter. Not bad, but the lotion taste takes alot away.

Yeasty floral, doughy, and sweet nose. Doughy mouthfeel with a herbal bitterness. Hay, light flowers, tobbaco, spice, a little ABV. Finishes doughy. Gold body with a white fluffy head leaving a ton of laceing down the glass. A nice solid saison.

"Foret" label
Pours golden with lots of character, popping bubbles, uneven (Small) head. The aroma of barnyard and yeast will wake you up...the flavor of buttered criossants will keep the belly full. This saison is bolder than most, but has all the traditional characteristics. Nice yeasty finish.

bottle. 2-004 on cork. cloudy dark yellow bordering on brown with a foamy pale head. wonderful aroma that struck me as i was pouring. yeast sweet grassy smells and a slight hint of alcohol. It is definitely making my saturday morning seem a little better. bitter lemon and biscuit are the three words that sprang to mind when i taste this. very refreshing and leaves a thick coating on my tongue with a lingering alcohol taste. This was worth getting out of bed for.
