Aroma is fresh and bright w/ flowery candy. Medium nectar w/ ample residual effers that create a soft cotton texture. First off this brew has a bright, crisp, and fruity charcter. It’s quite refreshing and has a defined ctrus rind componenet that quickly asserts itself and sticks like a strict teacher looking over your shoulder during class. Nicely spiced and only mildly sweet. I can taste flavors of citrus, cotton candy, clean spices, vanilla bean, peach and apple. The finish is bittered w/ citrus rind and peach pit leaving the palate dry w/ lingering spice and a refreshing sensation that directs me to drink more. Very addicting. Alcohol is well hidden. Very yeasty head, a very notable amount of spice but not too much, and an alcohol conent we can all agree with. The flavor never disagrees with your meal, and this beaity only gets better with cellaring. If you have never tried this fine Belgian Ale, I dare say that you’ve never lived, sir. 750 mL Bottle. Enjoyed this one with my Easter 2008 dinner: Roasted duck (marinated with orange puree and rosemary) with caramelized onions, saffron rice with peas, and a balsamic reduction, and rosemary sourdough rolls. Equally amazing with dessert: homemade sweet ricotta tart.
Poured into a Unibroue tulip glass, forming a huge foamy/rocky head. This beer is beautiful: the color of gold, hay at sunrise, and strong chamomile tea, with bubbles a-plenty rising from the bottom of the glass.
On the nose, this ale continues to unfold a plethora of offerings the longer I linger -- burnt sugar, caramel, grass and hay, almonds, cardamom, and (my favorite), boxwoods after a summer rain.
The taste picks up right where the nose leaves off: almonds, spice, white pepper, raw unrefined sugar and caramel, with a tart (almost mild citrus) twist. Superb!!
Nor does the palate disappoint: even thought the beer is slightly sweet on the tongue, the palate is cava-dry and bubbly. Wonderful stuff.
Overall: More, please!!! And, it’s organic, to boot.

This beer is really good. It’s got a light amount of hops in the finish, it seems. Smooth and a little spicy throughout. I could drink this all the time.
