got to be one of the finest in the world. bottle conditioned makes very soft on the palate. beautiful. fine craftsmenship and years of tradition in a 750 ml bottle. strong yet refreshing. the website has a 12 minute streaming video about their brewing and packaging process. texas label is different and gives a short story and description. "sturdy ale...herbal bouquet...well hopped...full, round, slightly sweet finish...have with bbq". i’m a fool for not partaking in this more often.

Dupont, très belle brasserie des Belgian Family Brewers, qui place un nombre impressionnant de bières dans les top rates. Pour ce qui est de la moinette, appelée avant l’abbaye de la Moinette, mais qui vient d’un patois local signifiant les marécages du Hainaut, province de la Belgique. Bref une abbaye propre à la famille... mais l’important est dans le verre. Très belle couleur blond foncé brillant, avec des milliers de bulles très fines qui divaguent partout. Une mousse crémeuse qui reste à 3 mm sur le liquide Des arômes d’épices sur des céréales mûres. Très joli bouquet. Texture soyeuse qui remplit magnifiquement la bouche. 1ère bouche avec un très beau piment d’entrée sur une pointe de houblon fin, et l’orge en base de goût. 2ème sur du blé mûr et un petit côté de fruits blancs. Le 3ème goût est une joyeuse conjonction des composants, qui forment un ensemble très harmonieux. La levure est bien définie, douce mais structurée (probablement multiple), et la lie de la bouteille est importante. L’alcool est bien dosé. La longueur fait place à une fine amertume sur un fond de très belle composition. La finale touche à la perfection pour ce type de bière : céréales, houblon, levure. En conclusion, je voudrais faire part d’un classement de catégorie qui me paraît plus judicieux. En effet pour moi, au vu de son niveau abv (8,5), de sa composition, du fait qu’elle était qualifiée avant d’abbaye, de sa refermentation en bouteille réellement sur lie, je pense que cette bière mérite d’entrer parmi les triples. Très beau score d’ailleurs dans la catégorie. Rien à dire, sauf que c’est un plaisir pur.

Golden straw blonde color with a big frothy white head and some floaties, a bit cloudy, leaving some nice lace; it’s real purdy lookin’ an’ ev’rything. Aroma is a complex and sticking in the nose; a touch of citrus. This beer isphenomenal; very deep, complex from all aspects. Very good !

Pours a golden straw blonde color with a big frothy white head and some floaties, a bit cloudy, leaving some nice lace; it’s real purdy lookin’ an’ ev’rything. Aroma is a little moldy with wet hay, yeast and alcohol.; complex and sticking in the nose; a touch of citrus. Sourish, dry; lots of vinegary and cidery flavors; bready, yeasty, sourdough; herbal and citrusy, stale hops, Italian/Provencal food herbs. Flavors last forever, and dry out the tongue...This beer is absolutely phenomenal; very deep, complex from all aspects. This is one of the best beers I’ve had.

One of my favorites. When young, it is brilliantly hoppy with perfect malt balance, light ad crisp and exciting. Three years of aging lightens the hops and brings out brilliant fruity, winey complexity and smoothness. Absolutely great.

Pours a light golden orange with a large 3 finger head. Head dissapears after a few mins of pouring to 1/2-1 finger head. The aroma is of tropical fruit and yeast. Lots of pear, pineapple, and a chesey yeast in the nose. Taste is of floral/spicy hops with lots of fruity esters up front. Finishes with a dry pilsner malt bite and a yeasty funk. Mouthfeel is very dry with high carbonation making every drink as enjoyable as the last. Overall an amazing beer!

2001: Billowy foam of superbly frothed cream. Huge and classy aroma of grass, coconut cream, spice, orange, lightly phenolic, wild onion, and wood. Spritzy and delicately creamy palate. Complex flavors include grass, mustiness, varietal pepper flares, and soft banana. Finishes slightly astringently with notes of leather, shoe polish, touch of lemon rind, iron, and heavily yeasty, honeydew, along with being simultaneously dry and creamy. The best Saison I have tried.

UPDATED: OCT 9, 2007 Crisp malts and sweet spices in the aroma. Opaque yellow-tan with decent off-white head that recedes to nice cover with some lacing and clouds of suspended yeast. Dough-like yeast flavours with crisp, toasty malts and citrus-lemon notes and light spicy finish. Medium body with very full mouth and sparkling carbonation. Bottle enjoyed with beerhugger, CapFlu, DumDum, muzzlehatch, radiomb and Rastacouere.
