COMMERCIAL DESCRIPTION
Belgian-styled dark wheat ale with thyme.
A rustic dark brown ale consisting of a large amount of wheat, and balanced touches of caramel and roasted malts. The soft hints of nuttiness, caramel, fruits, and spices are joined by earthy and herbal aromas and flavors from the addition of thyme. With savory nuances, Vigil pairs well with food. In ancient times, thyme was one of many herbs grown in monasteries and monks stuffed pillows with thyme to aid those suffering with insomnia.

Tap at the brewery. The thyme is really standing out at the forefront of the flavor and aroma of this beer now. I did not think I would like it, but I had a sample and it was not bad at all.

Tap at Monkish Brewing. Pours clear dark amber to tawny with a medium, creamy off-white head, short retention with good lacing. Aroma is rosemary, cookie and toast malt with dates, earthy hops. Flavor is malt dominant with rosemary, dates, light hops and bitterness with a dry finish. Medium body and carbonation.

Dark amber pour with an off-white head. Very strong herbal thyme aroma. A bit lemony and almost tart. Notes of grass along with the sweet malt notes of bread, toast, and caramel. Some banana, dark fruit, and cola as well. The flavor is a little too acidic and herbal for my liking. But, the finish does have some nice banana and caramel flavors. Toasted bread, subtle spice, and some dark fruit and cola notes.

Another winner from Henry at Monkish. Has a nice spice profile. I did not pick up thyme but it has a definite hit of herbs. I got a dominant nutty note as well. Almost liquid fruitcake here. This brown hued beer has a nice sparkle to it as well.

On tap. Pours with a hazed deep amber-brown hued body with a lasting tan head. Aromas are of thyme, almost savory/gamey/meaty, rosemary, herbaceous, toasted grain, pine, medium-low esters. Flavors are spicy, thyme, savory, grainy, toasty, rosemary. Medium fruity. Lively carbonation with medium body.
