By the end of spring, the vegetation is well-developed and with the help of nice weather, the bees will collect a surplus of dandelion honey.Le Printanier (springtime) is made from Québec dandelion honey. Its typical character stems from the nectar collected by the bees on these yellow flowers which carpet our fields in the spring.Probably the oldest fermented drink known, mead was traditionally drunk by many peoples on all five continents. It is evoked eloquantly in numerous folktales and mythologies scattered all over the world. The Franks believed that in their paradise, Valhalla, they would heat wild boar and drink mead, served by virgin nymphs, the Valkyries, until they became drunk.Serve it at the beginning of a meal with oysters, seafood, cheese, foie gras and pâté.
