12 ounce bottle- hopefully reasonably fresh as lord knows where the mlcc gets their beer from and how long its sat somewhere. Appearance- pale straw, one of the lighter Ontario IPA’s I’ve come across. Nice pillowy white head and sticky lacing. Nose- fresh cut lawn, pineapple and melon. Taste- nice suprise, pine and white grapefruit rind with a cookie dough malt backing. Nice stuff, only complaint is the mouthfeel is a little too creamy and lower in carbonation than my preference in an IPA.

Appearance : Slightly hazy yellow with small white head. Some lacing.
Aroma : Great fruity notes with light resinous and piny notes. Nice floral notes as well.Light malt.
Taste : Fruity and resinous. Finish is rather resinous and piny. Light floral notes. Light malt. Nice bitterness. No trace of alcohol. Slightly sticky on finish. Quite crisp.
Palate : Soft carbonation. Quite soft actually. Nice but maybe a tad too soft.
Overall : Great session IPA. Nice fruity and floral notes. Nice bitter backbone. Nice malt as well. Well balanced and quite drinkable. Really well made and this is a first for Muskoka in my experience. Nothing fancy but just very well made and quite tasty.

Cloudy yellow pour with thick white head. Floral and citrus aroma. Not a smooth beer, but in this rare case, it was a good thing. Felt like I was eating the IPA rather than drinking, which for IPA lovers is a great thing. Flavor stayed with me for awhile. Goes very well with bread or salty foods

473 mL can. Poured a pale gold, nice and clear. Thick white head with nice lacing. Pine, rosemary and juicy grapefruit on the nose, very forest like. Sweet, but well balanced with a slight sourness and a whack of bitter hops. A whole variety of citrus, tangerine and pomelo, honey and beeswax. Lanolin mouth feel, typical of North American IPA’s. Good stuff!

355ml bottle. Deep yellow-orange body, medium creamy head with a yellowish shade, decent retention, beautiful lacing. Aroma is yeasty fresh, orange peel, coriander, wormwood, grapes, floral spiciness, pine, and a little sweetness. Taste is a lot of bitterness, grapefruit, generous amount of Centennial and Chinook hops that gives a piney touch, spices, wormwood. Tom was definitely mad when he made this fine craft. Almost no alcohol feeling. It’ll be excellent with some cheese. By far the best Muskoka has offered so far.

May 4 2012. Bottle pours cloudy apricot with stringy things swimming in it. Head is foamy white settling to a cap. Good thing the aroma is fantastic kick of pineapple, grapefruit and citrus. Taste like hard grapefruit juice with a tart kick and hopsy bite on tongue. Palate is bitter and tart and leaves a strong hops bite that carries through to the next beer so be careful what it's matched with.

This IPA poured a cloudy yellow colour with a frothy, off white head. To the nose there are scents of pineapple, grapefruit and lemon citrus. A whole hell of alot of citrus. First sip was a punch in the face with hops. First taste almost tasted like hard grapefruit juice with a splash of pineapple. A little dough flavour and lemon grass thrown in. Finish is bitter with lemon flavours lingering.

An excellent IPA. There’s so much going on here, it’s singing to you while you chug. "Day-o" by Harry Belafonte comes to mind, but in double time played by the Tragically Hip and Nelly Furtado. While Stephen Leacock is throwing frozen watermelons, pineapples, and pinecones at your head. Yeah that sounds about right.

This is my new go-to beer. It is my favorite Ontario IPA. Mad Tom has that perfect blend of hoppy bitterness and citrus kick that I look for in this style of beer. Just as the label on the bottle says, I’ll brace myself and crack one of these open for old Tom anytime! Good stuff!
